Clean the pumpkin, cut it into cubes and put it in a pan with a tablespoon of oil and cook in the oven for about 10 minutes.
Put the pumpkin pulp in a bowl and crush it with the prongs of a fork. Then add the eggs and stir.
Then add the truffle sauce, the Parmesan cheese, chopped parsley, salt and pepper and mix until obtaining a homogeneous mixture.
Pour the mixture into a baking sheet lined with parchment paper, then cook the omelette in a preheated oven at 180 degrees for about 25 minutes.
