  • 1 Kg black grapes
  • 250 g flour
  • 100 g sugar
  • 6 g brewer's yeast
  • extra virgin olive oil

For the recipe of the crushed grapes, mix in a bowl the flour with a teaspoon of oil and 25 g of sugar. Dissolve the yeast in 150 g of lukewarm water and add it to the flour. Knead until you get a compact ball; cover with a damp cloth and let it rest for an hour and 30 minutes. Divide the dough into two; roll it out into two 35 cm diameter discs. Wash the grapes and spread a layer of berries in a buttered pan (diameter 35 cm). Cover with a disk of dough and sprinkle with half of the remaining sugar. Proceed with another layer of berries, the second disc of pasta and the rest of the sugar. Bake at 180 ° C for 1 hour and 15 minutes. Let stand for 1 hour and serve.
