Adas polow Recipe - Italian Cuisine


  • 400 g of adult bovine meat in small pieces
  • 400 g Basmati rice
  • 250 g lentils
  • 1 pc medium onion
  • cinnamon powder

  • tomato concentrate
  • extra virgin olive oil

  • 250 g sultana raisins
  • 20 pcs dates

For the adas polow recipe, soak the rice in plenty of salted water for 30-40 minutes. Slice the onion finely and brown in a saucepan with a little oil, add the beef and continue on the high heat. Add salt and pepper, season with 1 generous teaspoon of turmeric, 1 of cinnamon and after 1-2 minutes add 1 tablespoon of tomato paste and cover with water. Let it boil again, reduce the heat, cover and cook the sauce for 1 hour and 30 minutes. Cook the lentils in salted water until al dente, then drain. Bring a pot of unsalted water to the boil. Drain the soaked rice and pour it into boiling water. Once the boil is resumed, add the lentils; after 1 minute drain everything. Dissolve 1 dollop of saffron pistils in 1 glass of hot water (use it according to your taste). Collect 4 tablespoons of oil and half the water with saffron in a large non-stick saucepan; spread this mixture well over the entire bottom of the casserole, then form a layer of rice with lentils, sprinkle generously with cinnamon, add 1 teaspoon of chopped rose petals, still rice, a layer of sauce and continue in this order finishing with a layer of rice. Season with tufts of butter, add the rest of the saffron water, reduce the heat to low, put the lid on and cook for 30 minutes without ever stirring or removing the lid.
FOR THE SEASONING: Slice the onion and brown it gently in a veil of oil. Soak the raisins. Pitted dates. Season the drained raisins and dates in a knob of butter for a few minutes, then add the browned onion and some saffron pistils. Stir briefly and turn off. Serve the rice accompanying it with dates and raisins in a separate bowl.
