Sharp Cheddar, Avocado, and Tomato Panini

My daughter was home sick this week so I wanted to make her a special lunch to make her feel better. She has recently discovered a love for sharp cheddar and pepperjack cheese which is exciting for me because she hasn’t liked cheese for years. I made this tasty panini with some leftover roasted garlic bread that I had leftover from our dinner the night before and I layered it with sharp cheddar, tomato slices, and avocado. It was a hit with my daughter and she gobbled up every single bite.

Preheat your panini grill or a grill pan over medium heat.

Spread some of the shredded cheese on the bread then layer it with tomato and avocado and season with a bit of sea salt and freshly cracked pepper before adding a little more cheese. Place the other slice of bread on top.

Place into your panini pan (or grill pan).  Cook for 5 minutes or until crispy and golden brown.  Serve immediately.  Enjoy!

Side Note:  I always cook my paninis dry.  I find that using oil or butter on the bread makes the sandwich too greasy.  Try it – I bet you will like it and it’s way better for you!

Yield: 1

Cook Time: 5 min.



Ingredients:

2 slices of bread (I used roasted garlic)
Sharp cheddar, shredded
Tomato slices
Avocado slices
Sea salt and freshly cracked pepper, to taste

Directions:

Preheat your panini grill or a grill pan over medium heat.

Asian Turkey Burgers with Avocado and Sriracha Lime Mayonnaise

Amazing. I seriously love these burgers. I found this recipe on Tracey’s Culinary Adventures[1]. The turkey was juicy and tender and it tasted great with a thick slice of tomato and avocado along with mixed greens. I think one of the main stars of the show was the sriracha lime mayonnaise – the flavor combination was awesome with the burger! My husband really loved these burgers and the kids thought they were pretty good too. I served them with a cucumber salad and Asian Quinoa Salad[2] for a delicious and healthy meal.

Side Note: Make sure to use ground turkey with dark & white meat not plain ground turkey breast. The burgers will be juicy and more flavorful.

Combine the garlic, ginger, green onions, cilantro, soy sauce, rice wine vinegar, and sesame oil to a large bowl and stir to combine. Add the ground turkey and use your hands to gently mix. Divide the mixture into 6 balls then form each one into a patty.

Prepare the sriracha lime mayonnaise by combining the mayonnaise, sriracha, lime zest, and lime juice together in a bowl. Mix until well combined. Set aside.

Heat a large grill pan coated with cooking spray over medium-high heat. Cook the burgers for about 4 minutes per side, or until they are cooked through.

Place the burger on a bun with a bit of spicy mayonnaise on it. Top the burgers with a little more of the spicy mayo, tomatoes, mixed greens, and avocado followed by the other bun. Serve immediately. Enjoy.

Ingredients:

Burgers:

2 garlic cloves, minced
1/2 tsp fresh ginger, grated
1 green onion, thinly sliced
2 tbsp fresh cilantro, chopped
1/2 tbsp soy sauce
1/2 tbsp rice wine vinegar
1 tbsp sesame oil
1 lb ground turkey

Spicy Mayonnaise:

1/4 cup of mayonnaise
1/2-1 tsp of sriracha sauce
Zest and juice of 1/2 a lime

Other Ingredients:

4 hamburger buns
Avocado slices
Tomato slices
Mixed greens

Directions:

Turkey and Avocado Wrap with Pepper Jack Cheese

I love making wraps for a quick and healthy lunch that you can eat on the go. You can use any ingredients you have on hand from veggies, meats, and cheeses to peanut butter and jelly. My son loves getting a wrap with ham, cream cheese, and sharp cheddar in his lunchbox. Today I wanted my wrap to have a little turkey and loaded with veggies. It was super easy and quick to make and tasted fantastic!

Heat the tortilla in the microwave for 10 seconds, or until pliable.

Spread some mayonnaise on the tortilla then place a few turkey slices on top. Add baby spinach then thinly sliced tomatoes; season the tomato slices with freshly cracked pepper, to taste.

Sprinkle a bit of shredded pepper jack cheese on top of the tomatoes followed by avocado slices; season the avocado with sea salt.

Carefully roll tightly like a burrito. Cut in half then serve immediately. Enjoy.

Baby spinach
Tomato, thinly sliced
Fresh cracked pepper, to taste
Pepper Jack cheese, shredded
Avocado, sliced
Sea salt, to taste

Directions:

Heat the tortilla in the microwave for 10 seconds, or until pliable.

Spread some mayonnaise on the tortilla then place a few turkey slices on top. Add baby spinach then thinly sliced tomatoes; season the tomato slices with freshly cracked pepper, to taste. Sprinkle a bit of shredded pepper jack cheese on top of the tomatoes followed by avocado slices; season the avocado with sea salt. Roll like a burrito. Cut in half then serve immediately. Enjoy.
