Spaghetti with Tapenade, Tomatoes, Spinach, Arugula, and Feta

This is my new favorite pasta and I can’t wait to make it again.  I found this in an old Everyday Food and decided to finally give it a try – I am so glad I did.  I made my own tapenade[1] because it is ridiculously expensive and I like my homemade version better anyway.  I couldn’t decide between using arugula or spinach so I ended up using a little of each. This dish was a hit with all of us, especially me!  I had the leftovers for lunch today and it was just as good!  I highly recommend this recipe.

Make the tapenade[2].  Set aside for the flavors to mingle.

Cook the pasta in a large pot of boiling salted water, per instructions.  Drain pasta.  Return the empty pan to the stove and heat the olive oil over medium heat.  Add the tomatoes, crushed red pepper, sea salt, and freshly cracked pepper, to taste.  Cook, stirring often, for 4-5 minute or until the tomatoes are bursting; add the minced garlic and cook, stirring constantly, for 1 minute. Return the pasta back to the pan, add the tapenade, spinach, and arugula then mix until evenly coated.  Drizzle a bit more olive oil then season with sea salt and freshly cracked pepper, to taste.  Place into serving bowls then top with feta cheese.  Serve immediately.  Enjoy.

Ingredients:

1 lb of whole wheat spaghetti, cooked per instructions
1/2 tbsp of olive oil (plus more for drizzling)
1 1/2 cups of grape tomatoes
Dash of crushed red pepper flakes
Sea salt and freshly cracked pepper, to taste
1 clove of garlic, minced
1/2 cup of tapenade (recipe link above)
1 cup of baby spinach
1 cup of arugula
Feta cheese

Directions:

Make the tapenade. Set aside for the flavors to mingle.

I wanted a light and refreshing salad to serve with the Maple-Mustard Vinaigrette[1] I made. I decided to combine mixed greens with romaine lettuce, tart apples and dried cherries, carrot slices, sweet and salty candied pecans, and Parmesan cheese. The flavors of the salad mixed extremely well with the vinaigrette and I really loved it’s combination of flavors and textures. It was a big hit with all of us, adults and children, and it disappeared quickly.

Prepare the Maple-Mustard Vinaigrette[2]; set aside.

Combine the mixed greens together with the romaine lettuce in a large serving bowl. Add the chopped apples, dried cherries, carrot, candied pecans, and Parmesan cheese. Drizzle the salad with the maple-mustard vinaigrette then toss to coat evenly. Serve immediately. Enjoy.

4 cups of mixed greens

1 tbsp dried cherries
1 carrot, julienned
Small handful of candied pecans
Shaved Parmesan, to taste

I had quite a few smaller heirloom tomatoes so I decided to make a salad by adding some cucumber, onion, feta, and kalamata olives to the tomatoes then tossed them with some of my leftover Fran’s Vinaigrette[1]. I let the salad sit for 20 minutes to let the flavors mingle before serving with dinner. The tomatoes were so flavorful and delicious and paired nicely with the crisp cucumber, tangy olives, and salty feta. It was a nice flavorful salad the we all enjoyed – perfect for a hot summer evening.

Place the tomatoes in a bowl and add the cucumber, onion, and kalamata olives. Season with a bit of sea salt and freshly cracked pepper, to taste then drizzle with the vinaigrette. Toss to coat evenly then let it sit for 15-20 minutes for flavors to mingle. Sprinkle the top with feta cheese right before serving. Enjoy.

1/2 English cucumber, diced
1/4 small sweet yellow onion, sliced thinly
Handful of kalamata olives, halved
Sea salt and freshly cracked pepper, to taste

2 tbsp feta cheese
