?Baked? Beans

“Baked” Beans

by Pam on October 22, 2012

I wanted to make some baked beans for dinner but didn’t have the time to deal with dried beans.  I found this recipe that I adapted on Martha Stewart[1].  I added a little bit of bacon crumbles to the sauce  and used regular mustard instead of dried mustard. I planned on adding some brown sugar but didn’t because they were sweet enough without it. The beans turned out tangy, sweet, and very delicious! My kids both really loved these beans and so did I.

Heat a small sauce pan over medium heat.  Cut the bacon into pieces and place into the pan.  Cook, until crispy, for about 2 minutes on each side; remove from the pan and place onto paper towels to drain.  Crumble.  Add the onion to the pan (add a bit of oil if needed) and cook, stirring often, for 3-4 minutes.  Add the minced garlic and cook, stirring constantly, for 1 minute. Add the rinsed & drained cannelloni beans to the onion mixture then season with sea salt and freshly cracked pepper, to taste. Add bacon, 1/2 cup of water, ketchup, molasses, and mustard.   Cover and simmer for 1-2 hours, stirring occasionally.  Serve & enjoy.

Parmesan-Panko Crusted Halibut

Parmesan-Panko Crusted Halibut

by Pam on October 18, 2012

Our good friend Jake gave us some halibut he caught while in Alaska.  This recipe was inspired by my mother in law Fran who makes the best halibut!  She normally marinates the fish in an Italian dressing but since I didn’t have any on hand I just used lemon, olive oil, sea salt, and freshly cracked pepper.  I then tossed some panko crumbs with Parmesan, fresh parsley, garlic powder, salt and pepper then coated the fish in it.  I air baked it on high heat until it was flaky and tender on the inside and crunchy on the outside.  It was truly one of the best halibut dishes I have ever had.  The fish was fresh and delicious and the Parmesan panko topping made it extra special.

Drizzle the olive oil and lemon juice over both sides of the fish then season both sides with sea salt and freshly cracked pepper, to taste.

Line a baking sheet with tin foil.  Place a cooling rack on the baking sheet.  Coat with cooking spray. Side Note:  Cooking the fish on the rack will allow the fish to be crispy on both sides without flipping it over while cooking.

Combine the panko crumbs, Parmesan cheese, fresh parsley, garlic powder, sea salt, and freshly cracked pepper, to taste together on a plate.  Dip the halibut in the panko mixture until evenly coated. Place the coated fish on top of the cooking rack.

Place the baking sheet into the refrigerator for 20-30 minutes.  Side Note: This step will ensure the panko coating will stay on the fish.

Preheat the oven to 450 degrees.  Spray the top of each piece of fish with olive oil cooking spray. Place the baking sheet with the fish into the oven and cook for 15 minutes or until the fish is cooked through and flaky.  Remove from the oven and serve with a lemon wedge.  Enjoy.

Gordon Ramsay’s Sticky Baked Chicken Drumsticks

This delicious recipe comes from the Chef’s book, Gordon Ramsay’s Healthy Appetite. Gordon also cooked this dish on The Rachael Ray show in front of a live audience,  teaching Rachael a thing or two about cooking. [1]

These drumsticks are super easy to prepare and cook, so don’t hesitate to whip up a batch for dinner or company. Gordon says they taste just as good the next day, so you might want to double or triple the recipe if you like left-overs.

Ingredients for Chicken:

  • Chicken Drumsticks, 10
  • Olive Oil
  • Sea Salt
  • Black Pepper

Ingredients for Glaze:

  • Rice Wine Vinegar, 3 Tsp
  • Lemon Juice, from 1 1/2 lemons
  • Fish Sauce, 3 Tbsp
  • Honey, 6 Tbsp
  • Sesame Oil, 4 tsp
  • Soy Sauce, 4 tsp

Cooking Instructions:

Pre-heat the oven to 400 degrees F. Coat drumsticks with olive oil, then season with salt and pepper. Arrange drumsticks in a single layer in a casserole dish, and bake for about 20 minutes. Prepare the chicken glaze while the drumsticks are cooking. Making the glaze itself is super easy. Just mix all of the glaze ingredients together, and it’s prepared!

Remove the Chicken Drumsticks from the oven after about 20 minutes and coat with the glaze. Return to oven and bake for another 20-30 minutes until nicely browned. Make sure to turn the chicken a few times during this part of the cooking.

Remove from oven and let rest for a few minutes before serving. Enjoy.
