Spicy Garlic Edamame

Edamame is one of our favorite side dishes to pair with Asian food. My son REALLY loves it – especially doused with soy sauce. I sautéed this edamame with a bit of butter until cooked through then added the minced garlic and crushed red pepper flakes and cooked it for an additional minute or so. I seasoned it with sea salt, to taste. Of course, my son still added soy sauce to his. It was a hit with all of us.

Heat a skillet over medium heat. Add the butter and edamame together in the skillet and mix well. Add the edamame and stir to coat evenly. Cook for 4-5 minutes, stirring often. Add the minced garlic and crushed red pepper flakes and cook, stirring often, for 1 minute. Season with sea salt, to taste then remove from the skillet and serve. Enjoy!

Note: To eat whole edamame, simply put the pod into your mouth, bite down and pull through your teeth (similar to eating an artichoke leaf), the soybeans pop out of the pod and into your mouth. Discard the pods.

Yield: 4

Cook Time: 5-6 minutes



Ingredients:

2 cups of whole edamame
1 tbsp butter
2 cloves of garlic, minced
Crushed red pepper flakes, to taste
Sea salt, to taste

Directions:

Heat a skillet over medium heat. Add the butter and edamame together in the skillet and mix well. Add the edamame and stir to coat evenly. Cook for 4-5 minutes, stirring often. I needed to make a veggie for dinner and I found green beans in the fridge.  I wanted the beans to pair nicely with the chicken I was baking and the Sesame Noodles with Sautéed Shiitake Mushrooms and Kale[1] so I decided to sauté them with a little butter, soy, garlic, crushed red pepper flakes, ginger, and white pepper.  They turned out really spicy but we all liked the kick from the crushed red pepper flakes and loved the flavor from the soy butter. These beans disappeared quickly so it looks like I’ll be making them again.

Heat the butter and crushed red pepper flakes in a small sauté pan over medium heat. Add the washed and trimmed green beans (or haricot verts) to the pan then season with white pepper and ground ginger, to taste. Cover with a lid and cook for 2-3 minutes or until fork tender. Add the minced garlic and soy sauce and cook for 2-3 minutes. I made thin haricot verts but if you use bigger green beans then add more cooking time. Side Note: Add a tablespoon or two of water if the pan is dry. Serve immediately. Enjoy.

6 oz thin green beans (haricot verts), trimmed & washed
White pepper, to taste
Ground ginger, to taste
1 large clove of garlic, minced
2 tbsp soy sauce

Add the washed and trimmed green beans (or haricot verts) to the pan then season with white pepper and ground ginger, to taste. Cover with a lid and cook for 2-3 minutes or until fork tender. I wanted a simple and healthy side dish to pair with the Asian style pork tenderloin and Coconut Cilantro Rice[1] I was serving for dinner. I loved the simplicity of this dish. The snow peas were crisp tender with just enough garlic flavor without being overpowering. It was a terrific side dish to the rest of the meal and we all enjoyed it.

Heat the oil and butter in a large skillet over medium heat.  Add the snow peas to the skillet and cook, stirring often, for 4 minutes; add the minced garlic and cook, stirring constantly for 45 seconds. Season with sea salt and freshly cracked pepper, to taste.  Serve immediately.  Enjoy.
