Salty and salami pancakes recipe


  • 1 L milk
  • 600 g 00 flour
  • 600 g mixed cold cuts (mocetta, ham, lard)
  • 50 g rice flour
  • 4 pcs apples
  • peanut oil
  • salt

For the recipe for salted and cured pancakes, mix the milk with 500 g of 00 flour and rice flour in a bowl until a smooth batter is obtained. Leave to rest for 30 minutes in the refrigerator.
Peel and core the cored apples, then cut them into 3-4 mm thick slices. Pass them in the remaining flour, then dip them in the batter. Fry the apple slices in abundant hot oil, a few at a time, for 3-4 minutes, or until they are golden brown. Drain the pancakes, salt them and serve them with the meats.
