For the recipe of prawns in oriental sauce, open the prawns to the book without breaking them in two: to do so, engrave them along the back, but stopping at the base of the head. Rinse the crustaceans, dry them with a double sheet of absorbent paper, then salt and sprinkle with a pinch of powdered ginger.
Sprinkle the bottom of a plate with a spoonful of parsley, chopped together with a shallot. Then arrange the prawns with the open part resting on the plate. Go into the oven already heated to 200 for about 10 '. When they are cooked, place them on a serving dish and keep warm. Meanwhile, prepare the sauce: chop the leek and put it to dry in 4 tablespoons of oil. Then add a spoonful of vinegar, 3 of soy sauce, 3 of hot water, a teaspoon of tomato paste, a pinch of salt and chilli oil in quantity to taste.
Let the sauce slightly reduce, keeping it on high heat for about a minute, then turn off and season with the prawns. Serve immediately, sprinkle with a pinch of chopped parsley garnishing the dish to taste: we have used curly parsley and a "plume" of vegetables.
