Sausage Stuffed Piquillo Peppers – Not So Rare Spanish Beauty

There’s nothing quite like the piquillo pepper. They’re sweet, fruity, slightly smoky, and just bitter enough. For me, they’re the San Marzano tomatoes of peppers. And while I enjoy them in literally anything, these delicate, triangular beauties are just made for stuffing.


I don’t think I’ve ever filled them the same way twice, and while this most recent exploration was quite amazing, who knows what the future will bring. Having said that, this one may be worth repeating. I loved this Spanish-inspired combination of flavors.

The thing to keep in mind is that since you’re only cooking these for about 20 minutes, you’ll want to stay away from things that take longer than that. Things like raw rice, or larger chunks of vegetables just won’t work well here. Thankfully that leaves like a thousand other possible ingredients, so you have that going for you.


These are surprisingly easy to find, and any high-end grocery store should stock them. Gourmet cheese shops almost always have them, and you can find them all over the Internet. If all else fails, ask any Spanish person living near you, and they will know. I hope you give these beautiful peppers a try soon. Enjoy!


Ingredients for 12 Stuffed Piquillo Peppers:
12 Piquillo Peppers
olive oil, as needed
4 oz chorizo, Merguez sausage, or any spicy sausage meat
1/2 cup diced green onions
salt and pepper to taste
1/2 cup cooked white long grain rice
2 oz goat cheese
2 cloves crushed garlic
2 tbsp parsley, plus more to garnish
cayenne to taste
1 tsp cumin
2 tbsp sliced or chopped almonds
1 tsp blood orange zest
1 tbsp blood orange juice
400 F. for 15-20 minutes

Orange-Ginger Shrimp Skewers

My kids really love shrimp and Asian cuisine so I went in search of a recipe to combine the two.  I found this Cooking Light recipe on Myrecipes[1] that looked delicious, simple, and sure to please my kids – I was right.  The recipe couldn’t have been easier and both of my kids absolutely LOVED the shrimp and so did my husband and I.  I served these skewers with the Garlicky Green Beans and they paired nicely together.  I have a feeling my kids will be requesting these skewers again really soon.

Combine the orange juice and zest, green onions, fresh ginger, cilantro, rice vinegar, soy sauce, vegetable oil, crushed red pepper flakes together in a large zip lock bag.  Mix until well combined.  Add the shrimp to the zip lock bag and place into the refrigerator for 30 minutes.

Remove from the zip lock bag and thread them onto the skewer sticks (I did six shrimp per skewer on 10 skewers).

Heat a grill pan coated in cooking spray over medium-high heat.  Cook the skewers for 2 minutes on each side or until done.  Serve immediately.  Enjoy.

Orange-Ginger Shrimp Skewers




Yield: 4

Prep Time: 10 min. + 30 min. marinating time

Cook Time: 4 minutes

Total Time: 44 min.



Ingredients:

1/4 cup of fresh orange juice (about 1 orange)
1 tsp of orange zest
1 tbsp green onions, finely diced
1/2 tbsp fresh ginger, peeled & minced
1/2 tbsp fresh cilantro, finely chopped
1 tbsp rice vinegar (regular not seasoned)
1 tbsp soy sauce
1/2 tbsp canola oil
Dash of crushed red pepper flakes (more if you want it spicy)
1 lb of shrimp, peeled & deveined
Cooking spray

Directions:

Combine the orange juice and zest, green onions, fresh ginger, cilantro, rice vinegar, soy sauce, vegetable oil, crushed red pepper flakes together in a large zip lock bag. Mix until well combined. Add the shrimp to the zip lock bag and place into the refrigerator for 30 minutes.

Remove from the zip lock bag and thread them onto the skewer sticks (I did six shrimp per skewer on 10 skewers).

Ginger-Sesame Pork Chops

Ginger-Sesame Pork Chops

I had some thin cut pork chops and found a recipe on  Fine Cooking[1] that sounded delicious. I let the meat marinate for 1 hour then patted the chops dry before cooking them in my hot pan. They took only minutes to make and were so flavorful! I loved the ginger and orange combined with the soy and sesame. We all thought the meat was tender and tasty. I served these pork chops with a vegetable stir fry and some ginger-garlic rice (recipes to follow) for a healthy meal that’s way better than take out!

Combine the lime juice, sesame oil, soy sauce, ginger, orange juice, rice vinegar, vegetable oil, brown sugar, and orange zest together in a large zip lock bag. Mix until well combined. Add the pork chops to the bag and seal then shake to coat the chops evenly. Place into the refrigerator for 40 minutes then remove from refrigerator for the remaining 20 minutes.

Heat a large pan that has been coated in cooking spray over medium high heat. While the pan is heating up, place a couple of paper towels on a large plate. Remove the pork from the marinade and place on the paper towel covered plate. Pat the meat dry with another paper towel then season with sea salt and freshly cracked pepper, to taste. Place into the hot grill pan and cook for 4-5 minutes, or until golden brown. Flip the meat and cook for another minute to two minutes, or until cooked through. Remove from the grill pan and let the meat rest for 5 minutes before serving. Enjoy.

1/2 tbsp dark brown sugar
1/2 tsp orange zest
3 thin cut pork chops

Directions:

Combine the lime juice, sesame oil, soy sauce, ginger, orange juice, rice vinegar, vegetable oil, brown sugar, and orange zest together in a large zip lock bag. Mix until well combined.
