Mediterranean Chicken Wrap

I was craving a simple and healthy lunch so I went to see what I had on hand. I grabbed a flour tortilla, roasted chicken, mixed greens, Fran’s Vinaigrette[1], kalamata olives, red onion, and feta cheese from the refrigerator and grape tomatoes from the counter. I tossed them all together then wrapped them up in the tortilla. It was so delicious! I seriously ate it in minutes because it was so good and I am really thankful I have enough of everything to make for tomorrow’s lunch too. Yay! Quick, easy, and healthy – a perfect lunch!

Heat the tortilla in a microwave for 10 seconds so it becomes pliable.

Combine the roasted chicken, mixed greens, kalamata olives, red onion, feta cheese, grape tomatoes, and Fran’s Vinaigrette[3] into a bowl. Drizzle with a bit of the Fran’s vinaigrette, to taste then season with a little sea salt and freshly cracked pepper. Toss to coat evenly and place into the center of a flour tortilla. Roll then cut in the center at a diagonal. Serve immediately. Enjoy.

Ingredients:

1 flour tortilla

Red onion, thinly sliced
1 tbsp feta cheese
3 grape tomatoes, sliced
1 tbsp Fran’s Vinaigrette
Sea salt and freshly cracked pepper, to taste

Directions:

Spicy Roasted Chicken Drumsticks

We have been eating a lot of drumsticks around my house lately because my kids are “over chicken”. It seems that drumsticks are the only part of a chicken that they seem to enjoy, so drumsticks it is. I did a semi-spicy dry rub for this recipe and it was a hit with all of us. The chicken was quite simple to make, spelled delicious while it roasted, and tasted moist, juicy, tasty. I served this chicken with the Basmati Rice with Garlic, Pine Nuts, and Fresh Parsley[1] and some asparagus for a healthy and delicious dinner that we all liked.

Preheat the oven to 400 degrees.

Combine all the seasonings together in a bowl; mix until well combined.

Season the chicken drumsticks evenly with the seasonings. Heat an OVEN PROOF pan that’s been coated with cooking spray over medium heat. Add the chicken drumsticks to the HOT pan and cook for 2 minutes, or until golden brown. Flip the chicken over and place into the oven for 30 minutes. Remove from the oven and let the chicken rest for 5 minutes before serving. Enjoy.

1 tsp dried thyme
1 1/2 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
6 chicken drumsticks
Cooking spray

Directions:

Preheat the oven to 400 degrees.

Combine all the seasonings together in a bowl; mix until well combined.

Roasted Chicken Provençal

Roasted Chicken Provençal

I was in the mood to make roasted chicken but wanted to try something new. I grabbed one of my favorite cookbooks, Tyler’s Ultimate, and found this recipe. I adapted the recipe to suit my family’s tastes. The chicken smelled incredible while it roasted. The meat turned out to be extremely moist and tender and we all enjoyed the flavor the herbs gave to the bird. My daughter, was especially impressed with this recipe. I served this chicken with Garlicky Orzo with Roasted Vegetables[1] and my House Salad[2]. I’ll be making this one again.

Preheat the oven to 400 degrees. Line a roasting pan with tin foil and place a roasting rack inside.

Combine the olive oil, lemon juice, parsley, tarragon, and thyme leaves into a blender. Mix until a paste.

Carefully rinse the chicken, inside and out, with cold water then pat dry. Season the inside of the bird with sea salt, freshly cracked pepper, and garlic powder, to taste. Place the lemon halves, garlic cloves, and extra herbs into the cavity. Truss the chicken – click here for instructions[3].  Place the bird on the roasting rack. Rub the entire bird evenly with the herb mixture then season with sea salt, freshly cracked pepper, and garlic powder, to taste.

Place a meat thermometer into the thickest part of the thigh making sure not to touch bone. Place into the oven and roast for 1 hour, or until the thermometer reaches 180 degrees.  Take out of the oven and let the meat rest for 10 minutes before slicing and serving. Enjoy.

Prep Time: 10 min.

Cook Time: 60 min. +



Ingredients:

1/4 cup of fresh parsley leaves, stems removed (plus more for cavity)
1/4 cup of fresh tarragon leaves, stems removed (plus more for cavity)
1 sprig of fresh thyme leaves, stems removed (plus more for cavity)
1/4 cup of olive oil
Juice from 1 lemon
6 cloves of garlic
1 4-5 lb whole chicken
Sea salt and freshly cracked pepper, to taste
Garlic powder, to taste

Directions:

Preheat the oven to 400 degrees. Line a roasting pan with tin foil and place a roasting rack inside.
