Strawberry Balsamic Vinaigrette

We were going to a friend’s house for a birthday celebration and I wanted to make a special salad to go with dinner. I went online in search of a summery vinaigrette and found one at Barefeet In The Kitchen[1] that looked perfect. I adapted it a bit by using fresh strawberries, basil instead of rosemary, and a bit of vegetable oil. It couldn’t have been easier to make. It tasted a little bit sweet, a little bit tart, and tangy. It was light, flavorful, and perfectly delicious. This vinaigrette was a big hit with everyone except for my son, who wasn’t a fan. I will be making this again… SOON. Thanks for the great recipe Mary!

Combine the sliced strawberries, white balsamic vinegar, vegetable oil, olive oil, orange juice, honey, basil, sea salt and freshly cracked pepper, to taste, together in a large container. Blend using an immersion blender (or regular blender) until well combined. Taste and re-season with seasonings or honey if needed. Drizzle over salad and serve. Enjoy.

Strawberry Balsamic Vinaigrette




Yield: 1 cup

Prep Time: 5 min.

Total Time: 5 min.



Ingredients:

6 oz of Fresh strawberries, sliced
1/4 cup white balsamic vinegar
3 tbsp vegetable oil
1 tbsp olive oil
Juice of 1 small orange (about 2 tbsp)
1/2-1 tbsp honey
1/2 tsp dried basil
Sea salt and freshly cracked pepper, to taste

Directions:

Combine the sliced strawberries, vegetable oil, olive oil, white balsamic vinegar, orange juice, honey, basil, sea salt and freshly cracked pepper, to taste, together in a large container. I made a very simple tossed salad last night with romaine, grape tomatoes, avocado, green onion, pumpkin seeds, cotija cheese crumbles, and tortilla crisps on top. I didn’t want to use our regular vinaigrette[1] so I grabbed some cilantro and decided to make, instead of my usual Cilantro-Lime Vinaigrette[2], a creamy cilantro dressing. It turned out very flavorful and delicious and we all, except for my son, loved it.  I used lower fat buttermilk, mayonnaise, and sour cream but I am sure it would be tasty with the regular too. I recommend making it at least 30 minutes prior to serving so the flavors have time to mingle. I served this salad with the Black Bean Soup with Bacon[3] and they paired perfectly together.

Blend together the buttermilk, mayonnaise, sour cream, cilantro, jalapeno, green onion, minced garlic, lime juice, cumin, oregano, sea salt, and freshly cracked pepper, to taste, using an immersion blender until well combined and creamy.  Set aside to let the flavors mingle.

Place some chopped romaine in a serving bowl followed by grape tomatoes, diced avocado, green onion, pumpkin seeds, cotija cheese, and tortilla crisps.  Drizzle the salad with the creamy cilantro dressing then toss to coat evenly.  Serve immediately. Enjoy.

1/4 cup of olive oil mayonnaise
1/4 cup of sour cream
1/4 cup of fresh cilantro, chopped
1 small jalapeno, seeds removed & chopped
1 green onion, chopped
1 clove of garlic, minced
Juice from 1/2 a lime
1/4 tsp cumin
1/4 tsp oregano
Sea salt and freshly cracked pepper, to taste

Directions:

Blend together the buttermilk, mayonnaise, sour cream, cilantro, jalapeno, green onion, minced garlic, lime juice, cumin, oregano, sea salt, and freshly cracked pepper, to taste, using an immersion blender until well combined and creamy. Set aside to let the flavors mingle.

I found this recipe on Skinnytaste[1] and couldn’t wait to make it. I never make Caesar salads because they are so unhealthy but this recipe gives you all the Caesar salad flavor but without any of the guilt. I adapted the recipe a bit by adding some Worcestershire sauce, black pepper,  and extra garlic. This creamy dressing has a ton of flavor and it was super simple to make. I loved how tangy and garlicky it was. This will be a regular on my table from now on.

Combine the cheese, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, freshly cracked black pepper, to taste, and anchovies in a small bowl. Mix with an immersion blender until well combined. Add the oil and Greek yogurt and mix with the immersion blender until creamy and smooth. Taste and re-season with freshly cracked pepper, if needed. Enjoy.

Yield: 3/4 cup

1/3 cup of grated Parmesan cheese
1/4 cup of fresh lemon juice
2 cloves of garlic, minced
1/2 tsp Dijon mustard
Dash of Worcestershire Sauce
Freshly cracked pepper, to taste
2 anchovy fillets
1 tbsp olive oil
5 tbsp non fat plain Greek yogurt


Ingredients:

Combine the cheese, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, freshly cracked black pepper, to taste, and anchovies in a small bowl. Mix with an immersion blender until well combined. Add the oil and Greek yogurt and mix with the immersion blender until creamy and smooth. Taste and re-season with freshly cracked pepper, if needed. Enjoy.
