We went camping last weekend and I made a simple steak dinner with broccoli and salad. I had a bit of extra vinaigrette left over from our salad so I decided to toss the steamed broccoli with it…I am so glad I did! It gave the broccoli such a nice flavor! For once, my kids actually ate every single broccoli floret on their plates – YEAH! I decided to make it again this week and thought it would pair nicely with the Italian Chicken[1] and the Garlic Rice with Sautéed Onions, Sun-Dried Tomatoes, and Toasted Pine Nuts[2]. This is a quick and simple way to give broccoli an extra kick of flavor that your whole family will gobble up.

Combine the olive oil, seasoned vinegar, red wine vinegar, sugar, garlic, and sea salt and freshly cracked pepper, to taste. Whisk until evenly combined. Let the vinaigrette sit for 20-30 minutes to allow flavors to mingle.

Place the broccoli florets in a steamer tray that you have placed in a pot of boiling water. Once the water is boiling, place a lid on the pot and steam for 3-4 minutes or until broccoli is fork tender. Remove from the pot of water and steamer immediately. Pour the broccoli into a serving bowl then drizzle it with the vinaigrette and season with sea salt and freshly cracked pepper, to taste. Toss to coat the broccoli evenly. Serve & enjoy.

Ingredients:

I found this recipe on Our Best Bites[1] that looked perfect to pair with the Hawaiian Chicken Thighs[2] and Garlic Rice[3] I was serving for dinner. These green beans took only minutes to make and tasted fantastic.  My kids gobbled up their portions and my husband and I each had seconds. Simple side dishes are the best! I will be making these green beans again and again.

Mix the soy sauce and the sugar together in a small bowl and stir well; set aside.

Heat a skillet over medium heat. Add the bacon and cook both sides until crispy. Remove from the pan and place on a paper towel to drain. Crumble the bacon then set aside.

Remove all but 2 teaspoons of bacon grease from the skillet (or use the same amount of olive oil). Add the red onion and cook, stirring often, for 3-4 minutes.

While the onion is cooking, boil some water in a pot then place the green beans into the boiling water. Cook for one minute then drain.

After the onion has cooked for 3-4 minutes, add the garlic to the onion and cook, stirring constantly for 1 minute. Add the cooked green beans to the onions and garlic then cook for 2 minutes, stirring often. Stir the soy and sugar mixture really well then add that to the pan. Stir constantly for 1-2 minutes for the sauce to glaze the veggies; season with freshly cracked pepper to taste.  Add the bacon and mix until well combined. Pour into a serving dish and serve. Enjoy.

I found this Cooking Light recipe on MyRecipes[1] that looked delicious and I just happened to have all the ingredients on hand. I let the chicken thighs marinate all day long then cooked them in my grill pan. The chicken turned out moist, flavorful, and delicious – my whole family loved it. I served the chicken with some tasty green beans (recipe to post tomorrow) and Garlic Rice[2] with cilantro. It was a delicious and healthy meal and we all cleaned our plates.

Combine the pineapple juice, soy sauce, ketchup, ginger, garlic, and crushed red pepper flakes together in a zip lock bag. Mix well. Add the boneless skinless chicken thighs to the marinade; seal and place into the refrigerator for at least 4 hours.

Remove the chicken from the refrigerator 20 minutes prior to cooking. Place the chicken on a plate then season both sides with sea salt and freshly cracked pepper, to taste. Heat a grill pan coated in cooking spray over medium heat. Once the pan is hot, add the chicken thighs and cook for 4-5 minutes; flip then cook for an additional 4-5 minutes or until chicken is cooked through. Sprinkle the green onions over the cooked chicken and serve. Enjoy.

Hawaiian Chicken Thighs




Yield: 5

Prep Time: Marinate for 4 hours

Cook Time: 10 min.



Ingredients:

1/4 cup pineapple juice
2 tbsp soy sauce
2 tbsp ketchup
2 tsp ginger, minced
2 cloves of garlic, minced
Pinch of crushed red pepper flakes
6 boneless skinless chicken thighs
Sea salt and freshly cracked pepper, to taste
Green onions, chopped

Directions:

Combine the pineapple juice, soy sauce, ketchup, ginger, garlic, and crushed red pepper flakes together in a zip lock bag. Mix well. Add the boneless skinless chicken thighs to the marinade; seal and place into the refrigerator for at least 4 hours.
