Or what about the version with golden potatoes and garnished with rosemary tufts? Here are some tips to choose and cook the chicken perfectly.
How to choose chicken
Choose chickens from farms on land, and possibly in large areas: the meat of specimens bred in the open air, which can make movement, are more consistent, compact and tasty. The free-range chickens are tastier and with more firm meat, but finding them on the market is not easy. The young specimens, of 4 or 6 weeks, are perfect for grilling or roasting. The older ones, on the other hand, have more hard meat and are therefore suitable for stewed cooking.
How to keep the chicken?
The chicken can be kept in the refrigerator for 1-2 days, if raw. In case it is cooked, it is kept for 3-4 days. It is possible to freeze it, after having cleaned it from the entrails and cut into pieces. The meat must be closed in a bag or in a container (better if vacuum-packed), to prevent it from deteriorating in a short time. If cooked, it can be stored for four months, while if it is frozen raw it can remain for up to a year.
How to cook chicken
If you want to prepare the baked chicken, remember to cover it with a sheet of foil, to prevent all liquids from evaporating, leaving the meat hard. If you prefer the fried-chicked version, fill the pot with oil, so that all the meat is immersed and check the temperature of the oil, which should not be boiling hot. With the chicken you can also prepare meatballs or hamburgers: in this case add to the meat of the bread crumbs soaked in milk: it will serve to keep the dough softer. For a tastier chicken breast, instead, marinate the meat for several hours with lemon juice, aromatic herbs and garlic: you will have very tasty scallops. If you want a grilled chicken, remember to beat the pieces with the meat hammer, in this way you break the fibers, and the meat will cook in less time.
