First of all, wash the potatoes well, put them in a pan with plenty of cold water, bring to the boil and cook for about 25-30 minutes until they are soft, then drain them, peel them and mash them with a potato masher.
Season them with salt, pepper and oil, mix and leave to cool.

In the meantime, cut the fior di latte into cubes.

Take 1 slice of ham at a time, place some potatoes along one of the short sides, place a few cubes of cheese in the center and roll up the slice of ham on the filling.
Continue in the same way to create the other cannelloni.

Place a little bit of béchamel on the bottom of a baking dish suitable for baking, arrange the cannelloni in it and cover with the remaining béchamel and parmesan, then cook for about 25 minutes or until golden in a fan oven preheated to 200°C.

The ham cannelloni are ready, all you have to do is serve them.
