Place the chicken breast pieces in a blender with onion and parsley and blend.
Cut the bacon into strips and then into small pieces.
Add breadcrumbs and salt to the chicken and mix, then add the bacon (and pepper if you want).
Transfer the mixture to the work surface covered with baking paper, cover with a second sheet of baking paper and flatten with a rolling pin until you obtain a sheet that is not too thin.
Cut out circles with a 7-8 cm pastry cutter, then remove the center with another 2-3 cm cutter, so as to obtain donuts.
Gently lift the donuts, one at a time, and roll them in the breadcrumbs.
When they are all ready, fry them in plenty of already hot oil, making them golden on both sides, and then drain them on kitchen paper.
The chicken donuts are ready, serve them nice and hot.
