Wash the apples, peel them, cut them into small pieces and blend them.
Once chopped with a mixer, blend the apples even more finely with a blender, in order to transform them into a puree, which you will then have to filter with a narrow mesh strainer in order to obtain the juice.
Put the apple juice in a saucepan together with the juice and peel of both orange and lemon, add cinnamon, ginger and cloves, bring to a boil and simmer for about 10 minutes over low heat.
At this point, filter the mixture again, again with a fine mesh strainer.
The apple cider is ready, you can serve it both hot and cold.
