Sliced Heirloom Tomato and Avocado Salad with Basil and Shaved Parmesan

This really isn’t much of a recipe but it was so delicious I had to share it with you. I found some lovely heirloom tomatoes at the market and had an avocado, fresh basil, and shaved parmesan at home. I decided to layer them on a plate then season them with sea salt and freshly cracked pepper, to taste then drizzled some white balsamic vinegar and olive oil on top. It was a huge hit with my entire family and we gobbled up every last bite. It paired nicely with the chicken thighs and brown rice I served it with.
Slice the heirloom tomatoes and avocado. Layer them on a serving dish then add some fresh basil leaves and shaved Parmesan on top. Season well with sea salt and freshly cracked pepper, to taste, then drizzle the top with white balsamic vinegar and good olive oil, to taste. Serve immediately. Enjoy.

Ingredients:
3 heirloom tomatoes, sliced
1 avocado, peeled and sliced
Handful of small fresh basil leaves
2 tbsp shaved Parmesan
Sea salt and freshly cracked pepper, to taste
White balsamic vinegar, to taste
Olive oil, to taste
Directions:
