Recipe Mixed balsamic of snow peas and peas


  • 500 g snow peas
  • 250 g shelled fresh peas
  • 50 g pine nuts
  • 25 g mint
  • 25 g pickled capers
  • 15 g peeled fennel
  • extra virgin olive oil
  • salt

To prepare the balsamic mixture of snow peas and peas, rinse the capers well, chop them with the fennel and mint; mix everything with 5-6 tablespoons of oil to obtain a balsamic sauce.
Blanch the peas for 1 minute in boiling salted water, add the snow peas and after less than 1 minute drain and dip everything in abundant salted ice water.
toast pine nuts in a pan on medium-low heat, stirring often until they are golden brown (be careful not to burn them).

Couscous recipe with snow peas and cherry tomatoes


  • 250 g clean snow peas
  • 150 g couscous
  • 15 red and yellow cherry tomatoes
  • half red onion
  • lemon
  • parsley
  • mint
  • extra virgin olive oil
  • pepper
  • salt

For the recipe of couscous with snow peas and cherry tomatoes, heat 150 of water (a small glass) and add it to the couscous with 2 tablespoons of oil; let stand for 5 minutes, then shell the couscous with a fork and season it with oil and salt. For the sauce, peel the onion, cut it into slices and cook it for 5 minutes in a pan with a drizzle of oil and 2 tablespoons of water.
Cook the jackdaws in salted boiling water for 5-6 minutes, cool them in ice water, cut them into lozenges and season them in a pan with a drizzle of oil and a pinch of salt for 2 minutes. Wash the tomatoes and cut them in half.
Add to the couscous the onion, the snow peas and the cherry tomatoes (to taste, add half a teaspoon of lemon grass powder), grated lemon rind, the juice of half a lemon, a sprig of chopped mint leaves and parsley, seasoned with oil, salt and pepper, mix well and bring to the table.

Scampi recipe with potatoes and snow peas


  • 350 g new red potatoes
  • 250 g snow peas
  • 20 pcs whole prawns

For the scampi recipe with potatoes and snow peas, cut the potatoes into small slices, without peeling them,
and roast them in a pan with a little oil and a pinch of salt for about ten minutes. Boil the snow peas in salted boiling water for 3-4 minutes, then drain and season with a drizzle of oil, a pinch of salt and a few drops of lemon. Shell 8-10 prawns, then cut the others in half lengthwise: keep them tight with one hand and cut them on the back, from the tail to the head. Brown them all in a pan with a drizzle of oil and a pinch of salt for 2-3 minutes, turning them on both sides. Spread the scampi in dishes with roasted potatoes and jackdaws; complete with aromatic herbs to taste (we used dill), a pinch of pepper, grated lemon rind and some half washer.
