White chocolate cake spoons

These white chocolate cake spoons are great fun for kid’s parties. They can be decorated with sprinkles, edible glitter, chocolate or marshmallows. They can be coordinated to any colour and or theme you are planning. So simple to make, you could the kids involved in the decorating too. Watch them disappear in minutes.

Ingredients

  • 300g sponge cake, shop bought or home made
  • 150g white chocolate melted

To decorate:

  • 300g melted chocolate or candy melts of your choice
  • 12 disposable spoons
  • Sprinkles or grated chocolate

Make the balls smaller for bite size treats.

Method

  1. You will need a baking sheet covered in baking parchment. Cut you cake into squares and blitz in the food processor to make into crumbs. Pour into a mixing bowl and pour over the melted chocolate
  2. Mix together. Divide the mixture into 12 and form into balls
  3. Place on a baking sheet to chill for at least 30 minutes
  4. When cold and set, place ½tspn of chocolate on each soon. Dip each ball into the melted chocolate or candy melts, place on a spoon and cover with sprinkles or grated chocolate. Place onto the baking sheet and leave to set hard before serving

Red velvet cheesecake

Ingredients

For the base:

  • Packet of Oreo biscuits
  • 50g melted butter

For the filling:

  • 350g cream cheese
  • 150g caster sugar
  • 10g cocoa
  • 2 eggs
  • 2tsp vanilla extract
  • 30ml red food colouring

Method

  1. Preheat the oven to 180C/350F/Fan 160C/Gas Mark 4. Grease a 22cm Springform round tin
  2. In a food processor blitz the Oreos in a food processor
  3. Pour over the melted butter and blitz again
  4. Press the biscuit and butter mix into the base of the tin. Bake for 10 minutes
  5. Whilst the base is cooling make the filling by beating the cream cheese until smooth
  6. Add the sugar and cocoa and continue to beat. Add the eggs one at a time and beat between each addition
  7. Mix through the vanilla and red food colouring
  8. Pour the cream cheese mixture over the caramel and bake for 45 to 55 minutes, or until the centre wobbles slightly
  9. Remove from the oven and allow to cool completely, which is at least 2 hours
