Raspberry Coconut Pom Smoothie

It’s feeling like summer here in Portland. Today it was sunny and nearly 90 degrees! My kids were hot and tired when I picked them up from school so I decided to treat them to a tasty smoothie. I used some fresh raspberries, Greek coconut yogurt, Pom/Coconut juice and ice. They were a touch tart so I added a little bit of agave which made them perfect! These drinks were a refreshing, delicious, and healthy after school snack.

Combine the fresh raspberries, Greek coconut yogurt, Pom/Coconut juice and ice together in a blender. Blend until smooth. Taste & add a touch of agave (or honey), if needed. Serve immediately. Enjoy.

Raspberry Coconut Pom Smoothie




Yield: 2

Total Time: 5 min.



Ingredients:

6 oz fresh raspberries
2 (5.3 oz) Greek coconut yogurt
12 oz Pom/Coconut juice
2 cups of ice cubes
Agave or honey, to taste

Directions:

Combine the fresh raspberries, Greek coconut yogurt, Pom/Coconut juice and ice together in a blender. Blend until smooth. Taste & add a touch of agave (or honey), if needed. Serve immediately. Enjoy.

Toasted Coconut, Banana, and Raspberry Muffins

I wanted to do something special for my kids so I made up a batch of these tasty muffins as an after school snack. I threw in some of my kids’ favorite ingredients – banana, coconut, and fresh raspberries into these muffins. The muffins smelled amazing while they baked and needless to say my kids were thrilled to find the warm muffins waiting for them when they got home from school. These muffins were a huge hit with both of my kids and disappeared quickly. 

Preheat the oven to 350 degrees then coat a muffin pan with cooking spray – I used coconut oil spray.

In a small bowl, combine the flours, baking soda, and salt together, mix well. In a large bowl, beat together the coconut oil, sugar, banana, and vanilla until creamy. Add the eggs, one at a time, then continue beating until well combined.

Add the flour mixture to the banana mixture and stir until just combined. Add the 3/4 cup of coconut then gently mix them into the batter.

Spoon the batter evenly into each muffin tin. Add three fresh raspberries to each muffin, pushing them in gently. Evenly sprinkle the remaining 1/4 cup of coconut to the tops of each muffin.

Place into the oven and bake 23-25 minutes or until a tester inserted into the center comes out clean. Let the muffins cool on a rack. Slather with butter and enjoy!

Cook Time: 23-25 minutes



Ingredients:

1 1/2 cups of white flour
1/2 cup of whole wheat flour
1 tsp baking soda
1/4 tsp salt
1/2 cup of coconut oil, melted
1/2 cup of brown sugar
2 large eggs
3 overripe bananas
1 tsp vanilla
1 cup of sweetened shredded coconut, divided
Fresh raspberries

Directions:

Raspberry Frozen Yogurt

Raspberry Frozen Yogurt

My grocery store was out of my usual brand of vanilla yogurt so I grabbed a different brand. It’s flavor was a bit too tart for my liking so I decided to try to make a very basic and simple frozen yogurt out of it. I didn’t want to dig out my ice cream maker, so I just blended some fresh raspberries then strained them to remove the seeds. I mixed it with the yogurt and added agave syrup until it tasted sweeter. I froze it in a tupperware container for 4-5 hours and then served it to my kids for an extra special after school snack. I topped the frozen yogurt with mini chocolate chips and they loved it! Both kids gave this frozen yogurt two thumbs up and said it was blog worthy.

Place the raspberries into a blender then pulse until well combined. Pour the raspberries into a strainer over a bowl to remove all of the seeds. Combine the strained raspberries with the yogurt. Add the agave, to taste, then stir until well combined. Place into a freezer proof tupperware then seal with the lid. Place into the freezer for 4-5 hours. Scoop frozen yogurt into a small bowl and top with chocolate chips or chocolate syrup, if desired. Enjoy.

Raspberry Frozen Yogurt




Yield: 8

Prep Time: 10 min.

Total Time: Freeze 4-5 hours



Ingredients:

2 cups of fresh raspberries
32 oz vanilla yogurt
Agave syrup, to taste (depending on the tartness of the berries & yogurt)

Directions:

Place the raspberries into a blender then pulse until well combined. Pour the raspberries into a strainer over a bowl to remove all of the seeds. Combine the strained raspberries with the yogurt. Add the agave, to taste, then stir until well combined. Place into a freezer proof tupperware then seal with the lid. Place into the freezer for 4-5 hours. Scoop frozen yogurt into a small bowl and top with chocolate chips or chocolate syrup, if desired. Enjoy.
