Whole Wheat Ciabatta – Not Bad, Which is Great!

I’ve never had much of a taste for whole wheat bread, which is not surprising if you grew up during the Wonder Bread years. Whole wheat flour is significantly stronger tasting, and its earthy, bitter aftertaste is the reason white flour is the much preferred choice for, well, everything.


Besides the taste, it’s also a little harder to work with, and fairly easy to turn out something with a density that would make a brick blush. But, thanks to many years of requests, I decided to give the old no-knead ciabatta a higher-fiber makeover. Since I don’t have much whole wheat baking experience, I did what any good chef would do…I didn’t do any research, and just tried to figure it out.

I was quite happy with the taste and texture, and going 50/50 with the all-purpose flour provided just enough of that crusty, chewy “normal” bread experience, and we still get a decent amount of whole grain.


The procedure is straightforward, but as I point out in the video, pay attention to when you start. I recommend doing the sponge in the afternoon, mixing the dough at night, and baking it in the morning. Speaking of which, be sure to dust your dough with flour before covering. I didn’t, and had a little sticking problem.

Ingredients:
For the sponge:
1 cup tepid water
1/4 tsp dry active yeast
1 oz (1/4 cup) rye flour (you can sub wheat flour)
2.25 oz (about 1/2 cup) all-purpose flour
2.25 oz (about 1/2 cup) whole wheat flour
let sit until very bubbly, about 5 hours

Then add:
1/2 cup room temp water
1 3/4 tsp fine salt
1 1/2 tsp honey
1 tbsp polenta
1 tbsp ground flax seed
2 tbsp shelled sunflower seeds
4.5 oz (about 1 cup) all-purpose flour
4.5 oz (about 1 cup) whole wheat flour
-Bake at 450 F. for 30-35 minutes

Garlic bread is always popular to serve with barbecued or grilled meats as well as pasta dishes and takes minutes to make. We’ve used French bread in this recipe but you can also use ciabatta bread or even crusty rolls. Any leftover garlic butter can be dotted on cooked vegetables such as carrots and green beans or served on steak just before serving.

You can make this butter a few days in advance, wrap it tightly in cling film until needed. It can also be frozen, but don’t store for more than 1 month as garlic can develop a stronger flavour if kept for too long

Ingredients

  • 3 cloves garlic, peeled and crushed
  • 100g salted butter, softened
  • 3tbsp finely chopped parsley
  • 1 loaf French bread

Method

  1. Heat the oven to 200°C/400°F/Gas Mark .
  2. Mix the garlic into the softened butter with the parsley.
  3. Cut the French stick into slices, without cutting right through the bread. Spread the butter in between each slice, then wrap the bread in a sheet of foil and bake for 10-15 mins until golden brown and crispy. Serve immediately.

Greek Salad Sandwich


If you love a Greek Salad, then you’ll love this sandwich. Crisp Romaine lettuce, tomatoes, cucumbers, kalamata olives, feta cheese and red onion on ciabatta bread with a touch of oil and red wine vinegar. 

Some of you have been asking me for more sandwich recipes to pack up for work, school or to eat on the road. This is a great sandwich, it’s meatless but has plenty of flavor from the olives and feta. You can even add some sun dried tomatoes.

Greek Salad Sandwich

Ingredients:

  • 2 tbsp red wine vinegar
  • 4 tsp extra virgin olive oil
  • 5 tbsp Kalamata olives, minced
  • 4 thin slices red onion
  • coarse salt and fresh ground pepper, to taste
  • 4 tbsp crumbled feta
  • 12 oz ciabatta bread, cut into 4 pieces
  • 8 Romaine lettuce leaves
  • 1/2 medium cucumber, thinly sliced
  • 1 medium tomato, thinly sliced

Directions:

In a small bowl whisk red wine vinegar, and olive oil, season with salt and pepper. Add chopped olives and red onions set aside. I like to add the onions to the vinegar, this mellows out the sharpness of the onion, but completely optional.

Spread the olive mixture on 4 slices bread. Top with lettuce, cucumber, tomatoes, and red onion; season with salt and pepper. Top with feta, close and cut sandwich in half.
