Mexican Chopped Salad with a Citrus Vinaigrette

I saw this recipe on Better Recipes[1] and couldn’t wait to make it. I loved the flavor of the vinaigrette and the crunch of all the veggies in the salad. It was refreshing, healthy, and super delicious. We all enjoyed it and gobbled it right up. I had the leftovers the following day, and aside from the soggy lettuce, it was still crunchy, flavorful, and delicious. This is a terrific salad that would pair nicely with most Mexican main dishes.

Combine the cumin, coriander, cayenne, orange juice, orange zest, lime juice, lime zest, olive oil, sea salt, and freshly cracked pepper, to taste together in a bowl. Whisk until well combined. Set aside.

Chop the tomatoes, green onions, avocado, bell pepper, and romaine lettuce. Drain and rinse the black beans and thaw the frozen corn and edamame. Place the chopped romaine lettuce in the bottom of a dish. Arrange the remaining salad ingredients on top of the lettuce in rows. Toss with vinaigrette, to taste, when ready to serve. Sprinkle the top with cheese and cilantro. Serve and enjoy.

Ingredients:

Vinaigrette:

1/2 tsp cumin
1/2 tsp coriander
Dash cayenne pepper
1 clove of garlic, minced
2 tbsp fresh orange juice
1/4 tsp orange zest
2 tbsp fresh lime juice
1/4 tsp finely grated lime zest
1/2 tbsp agave syrup or honey
2 1/2 tbsp olive oil
Sea Salt and Freshly cracked Pepper, to taste

Salad:

1 cup grape tomatoes, halved
2 green onions, chopped
1/2 can black beans, rinsed and drained
1 avocado, diced
1 small orange bell pepper, diced
1 cup pre-cooked edamame
1 cup corn, frozen (thawed)
1 cup of romaine lettuce, chopped finely

Garnishes:

Cotija cheese, crumbled
3 tbsp fresh cilantro, chopped

Directions:

I wanted a light and refreshing salad to serve with the Maple-Mustard Vinaigrette[1] I made. I decided to combine mixed greens with romaine lettuce, tart apples and dried cherries, carrot slices, sweet and salty candied pecans, and Parmesan cheese. The flavors of the salad mixed extremely well with the vinaigrette and I really loved it’s combination of flavors and textures. It was a big hit with all of us, adults and children, and it disappeared quickly.

Prepare the Maple-Mustard Vinaigrette[2]; set aside.

Combine the mixed greens together with the romaine lettuce in a large serving bowl. Add the chopped apples, dried cherries, carrot, candied pecans, and Parmesan cheese. Drizzle the salad with the maple-mustard vinaigrette then toss to coat evenly. Serve immediately. Enjoy.

Ingredients:

4 cups of mixed greens
2 cups of romaine lettuce, chopped
1 apple, diced
1 tbsp dried cherries
1 carrot, julienned
Small handful of candied pecans
Shaved Parmesan, to taste
Maple-Mustard Vinaigrette (see recipe link above)

Directions:

Prepare the Maple-Mustard Vinaigrette; set aside (see recipe link up above).

Cobb Salad

I just found my new favorite salad. This may not be a traditional Cobb Salad because  I used turkey breast instead of chicken and feta cheese instead of blue cheese, but that’s what I had on hand, so that’s what I used. It was hearty and filling without making me feel stuffed. I used Fran’s Vinaigrette and it topped this salad perfectly!

Place the romaine lettuce and mixed greens in the bottom of a salad bowl. Arrange the onion, turkey, tomato, feta cheese, carrots, bacon, hard boiled egg, and avocado in rows across the lettuce. Serve immediately with Fran’s Vinaigrette or dressing of your choice on the side. Enjoy.

Cobb Salad




Yield: 1

Total Time: 10 min.



Ingredients:

1 cup of romaine lettuce
1 cup of mixed greens
2 slices of turkey breast, diced
1 slice of bacon, cooked & crumbled
1/4 avocado, diced
5 grape tomatoes, sliced
1 tbsp feta cheese
2 tbsp carrots, shredded
1 hard boiled egg, sliced
1 tbsp red onion, sliced
Fran’s vinaigrette (or dressing of your choice)

Directions:

Place the romaine lettuce and mixed greens in the bottom of a salad bowl. Arrange the onion, turkey, tomato, feta cheese, carrots, bacon, hard boiled egg, and avocado in rows across the lettuce. Serve immediately with Fran’s Vinaigrette or dressing of your choice on the side. Enjoy.
