Lamb burger Wellington

Print Page

Ingredients

  • 500g lamb mince
  • 8-12 mint leaves
  • 50g feta cheese
  • 2 garlic cloves
  • Salt and freshly ground black pepper
  • 200g puff pastry
  • 1 egg, beaten, for glazing

That’s goodtoknow

Use beef mince instead of lamb and fill with cooked bacon and grated Cheddar instead of feta and mint.

Method

  1. Divide the mince into four equal-sized balls.
  2. Take two cooking rings and press two of the balls into each ring to make a pattie.
  3. Layer the mint, garlic and feta on the top of the first pattie, then put the second pattie on top.
  4. Divide the pastry into four rectangles. Flour a surface and roll out to 0.5cm thick.
  5. Remove the pattie ‘sandwiches’ from the rings and lay each on a rolled out sheet of pastry. Bring all the sides together to form a parcel.
  6. Lay out another sheet of pastry and repeat the wrapping to ensure the lamb burger is completely sealed.
  7. Brush with beaten egg and add a grind of pepper.
  8. Preheat the oven to 180°C/350°F/Gas 4 and cook the Wellingtons for 40-45 mins.

Greek Salad Sandwich

If you love a Greek Salad, then you’ll love this sandwich. Crisp Romaine lettuce, tomatoes, cucumbers, kalamata olives, feta cheese and red onion on ciabatta bread with a touch of oil and red wine vinegar.

Some of you have been asking me for more sandwich recipes to pack up for work, school or to eat on the road. This is a great sandwich, it’s meatless but has plenty of flavor from the olives and feta. You can even add some sun dried tomatoes.

Other sandwiches I love that don’t require heating up Egg Scallion and Tomato Sandwich[1], Tomato Roasted Pepper and Mozzarella Sandwich[2], Prosciutto Arugula and Balsamic Sandwich[3], Heirloom Tomato Sandwich,[4] Grilled Chicken Sandwich with Avocado and Tomato[5], and my favorite… Roast Beef, Arugula and Shaved Parmesan[6]. More sandwiches are coming soon, what are some of your favorite sandwiches?

Ingredients:

  • 2 tbsp red wine vinegar
  • 4 tsp extra virgin olive oil
  • 5 tbsp Kalamata olives, minced
  • 4 thin slices red onion
  • coarse salt and fresh ground pepper, to taste
  • 4 tbsp crumbled feta
  • 12 oz ciabatta bread, cut into 4 pieces
  • 8 Romaine lettuce leaves
  • 1/2 medium cucumber, thinly sliced
  • 1 medium tomato, thinly sliced

Directions:

In a small bowl whisk red wine vinegar, and olive oil, season with salt and pepper. Add chopped olives and red onions set aside. I like to add the onions to the vinegar, this mellows out the sharpness of the onion, but completely optional.

Spread the olive mixture on 4 slices bread. Top with lettuce, cucumber, tomatoes, and red onion; season with salt and pepper. Top with feta, close and cut sandwich in half.

Roasted Grape Tomatoes and Zucchini Topped with Feta and Chives

Roasted Grape Tomatoes and Zucchini Topped with Feta and Chives

by Pam on April 29, 2013

I wanted a simple, healthy, and quick side dish to pair with the chicken and orzo I was making for dinner. I grabbed a zucchini and a container of grape tomatoes along with some feta and chives. I simply roasted the seasoned veggies for 15 minutes then topped them with fresh chives and feta cheese. My kids don’t care for zucchini so they weren’t impressed with this side dish. My husband and I, on the other hand, both loved it and thought it paired nicely with the rest of our dinner.

Preheat oven to 350 degrees. Coat a small baking dish with cooking spray.

Place the grape tomatoes, zucchini, and minced garlic in the baking dish. Drizzle with olive oil, sea salt, and fresh cracked pepper, to taste. Toss to coat the veggies evenly.

Place into the oven and roast for 15 minutes. Remove from the oven and pour them into a serving bowl. Top with feta cheese and fresh chives. Serve immediately. Enjoy.
