Skinny Eggnog Cake

Need an easy dessert to bring to a Holiday party?

This cake is easy and delicious. Simply combine a yellow box cake mix with nutmeg, Chobani, water and egg whites and you’ll have a deliciously light cake ready in no time. Top the cake with some whipped topping spiked with rum or rum extract and dessert is ready!

I used Truwhip[1] as a healthier alternative to Cool Whip, which contains no HFCS, hydrogenated oils, transfats
or GMOs. I heard Trader Joe’s also carries a similar whipped topping if you are lucky enough to have one near you. Happy Holidays!!

Ingredients:

  • 16.5 oz package yellow cake mix
  • 6-oz fat-free Greek yogurt
  • 1 cup water
  • 2 large egg whites
  • 1 1/2 tsp ground nutmeg, plus more for garnish
  • baking spray

For the Rum Topping:

  • 10 oz  Truwhip[2] or reduced fat whipped topping
  • 1 tbsp rum (or a few drops rum extract)

Directions:

Preheat oven to 350°. Lightly spray a 9 x 13 inch baking pan with baking spray.

Combine all the cake ingredients in a large mixing bowl and beat until combined. Pour into prepared baking pan and bake about 28-30 minutes, or until a toothpick inserted comes out clean. Allow to cool before frosting.

For frosting, in a small bowl, whisk whipped topping with rum or rum extract. Spread over cake and dust with more nutmeg. Keep refrigerated if making this ahead OR keep whipped topping in the refrigerator and serve on the side.

Makes 15 servings.

Candy Corn Fruit Parfaits

A delicious Halloween treat that’s light and easy to make. If you need an idea for a healthier Halloween dessert at your next party &ndash; look no further!

Confession: I strongly dislike candy corns. As a kid I was always disappointed to find them in my trick or treat bag. But candy corns are such great inspiration for Halloween treats and decorations, I just had to share this.

You basically layer orange and yellow fruit in clear cups and top with whipped cream. I used mandarin oranges and pineapple because I love the combination, but you can also use mangos, melon, oranges &ndash; whatever. These cute little jars I found in Homegoods are perfect to use as cups, but you can use clear disposable plastic cups if you are having a party.

For a whipped topping that is lighter than the average whipped cream yet not full of “fake” ingredients I’ve been making this light whipped topping by whipping my cream and folding in Greek yogurt. Cuts the fat down and tastes delicious!

If you prefer to use whipped topping, go for it or if you want to have this for breakfast I say just top it with vanilla yogurt. But for dessert &ndash; I wouldn’t change a thing! Hope you try this, you will LOVE it!!

Candy Corn Fruit Parfaits

For the Lighter Whipped Topping: (makes 1 1/2 cups)

  • 2 tablespoons sugar
  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon vanilla
  • 1/2 cup fat free plain Greek yogurt (I used Chobani)

For parfaits:

  • 2 2/3 cups diced pineapple (fresh or canned)
  • 2 2/3 cups jarred mandarin oranges, drained

Directions:

To make the lighter whipped cream, place a metal mixing bowl and metal beaters of a hand mixer into the freezer for 10 to 15 minutes.

Place the sugar into the mixing bowl and add the whipping cream. Using a hand mixer, beat just until the cream and vanilla reaches stiff peaks, about 2 – 3 minutes. Fold in the Greek yogurt.

In 8 oz jars or clear plastic cups place 1/3 cup mandarin oranges in each, then 1/3 cup pineapple. Top each with 3 tablespoons of whipped cream.

Skinny No-Bake Peanut Butter Pie

Light and creamy and ever so addicting! Whip this up in minutes for a dessert everyone will love. It’s Peanut Butter Lover’s Day (who knew!) so I thought I would revive this from the archives, one of my favorite desserts!

I don’t know about you but I love pie! Fruit pies, banana pie[1], pumpkin pie[2], pudding pies, and high on my list… peanut butter pie. To keep it light I used Better n’ Peanut Butter[3] which is available at Target, Trader Joe’s, health food stores and online[4].

Drizzle the top with a little chocolate syrup right before serving and you will enjoy each and every last bite!

Ingredients:

  • 5 oz reduced fat cream cheese, softened
  • 1/2 cups confectioners’ sugar
  • 1/3 cup Better n Peanut Butter[5]
  • 8 oz fat free frozen whipped topping, thawed (or truwhip[6] for healthier option*)
  • reduced fat graham cracker pie crusts
  • 3 tbsp Hershey’s chocolate syrup

Directions:

Beat cream cheese and confectioners’ sugar together in a medium bowl.  

Mix in Better ‘n Peanut Butter and beat until smooth. Fold in whipped topping.

Spoon into graham cracker pie shell; cover, and refrigerate until firm, at least 2-3 hours. Drizzle with chocolate syrup before serving.

Note: For an all natural whipped topping option, look for truwhip[7].  It contains neither high fructose corn syrup nor hydrogenated oil. Their website has a store finder[8] so you can locate it at a store near you.
