Naked Turkey Bruschetta Burger

Lean, delicious, juicy turkey burgers made with zucchini and topped with a summer garden tomato bruschetta topping over a bed of baby arugula – no bun required!

Last week I went out to dinner with the girls and we went to this great little neighborhood spot. My girlfriend ordered the special, the bruschetta burger. Hers was a beef burger, but that inspired me to make this lighter version which turned out delicious. For the turkey burger, I went with my skinny turkey burger recipe I posted a few years back, it’s made with shredded zucchini which gives it lots of moisture and great flavor. They are delicate, so I prefer to make them on a skillet instead of the grill.

This is the perfect summer meal for under 300 calories, especially if you have lots of tomatoes in your garden. You can easily make these vegetarian by using a boca burger or veggie burger of your choice. By the way the lovely fork is by For Such A Time Designs[1]. Hope you enjoy!

Naked Turkey Bruschetta Burgers

Ingredients:

  • 1/4 cup chopped red onion
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • kosher salt and fresh cracked pepper to taste
  • 3 medium vine ripe tomatoes
  • 2 small cloves garlic, minced
  • 2 tbsp fresh basil leaves, chopped
  • 3 oz part skim mozzarella, diced

For the turkey zucchini burgers:

  • 1.25 lbs 93% lean ground turkey
  • 1 small zucchini, grated (1 cup, or 5 oz)
  • 1/4 cup seasoned whole wheat breadcrumbs
  • 1 clove garlic, grated
  • 1 tbsp red onion, grated
  • salt and fresh pepper
  • oil spray

For serving:

  • 2 medium tomatoes, sliced into 10 thin slices
  • 4 loose cups baby arugula

Directions:

Combine the red onion, olive oil, balsamic, salt and pepper in a large bowl. Set aside a few minutes while you chop the tomatoes, then place in the bowl. Add the garlic, basil and additional salt and pepper, to taste and mix well and set aside. Toss in the cheese when ready to serve.

Squeeze the excess moisture from the zucchini in a paper towel. In a large bowl, combine the ground turkey, shredded zucchini, breadcrumbs, garlic, onion, salt and pepper. Form into 5 equal sized patties about 5 oz each, forming them as flat as possible.

Heat a large skillet on medium-high heat. When hot, lightly spray with oil. Add the burgers to the pan and reduce the heat to medium-low. Cook until browned, about 4 minutes, then flip and cook another 4 minutes, careful not to burn.

To serve, arrange 3 slices of tomatoes on each dish, then place 1 cup arugula on top in the center, then top with the burger and finish with the bruschetta (don’t forget to add the cheese), serve right away.

Greek Turkey Burgers with a Dill Garlic Mayonnaise

I wanted to make turkey burgers using Greek flavors and I found a recipe On Simply Scratch[1] that looked perfect. I loved the flavors of the roasted bell pepper, feta, and kalamata in the turkey meat. The dill garlic mayonnaise made this burger so flavorful and extra special. My daughter loved it and so did my husband and I. My son wasn’t a fan of the mayonnaise but otherwise liked the burger. I served these burgers with Greek Orzo[2] and fresh cherries for a delicious and healthy meal.

Combine the mayonnaise, fresh dill, lemon zest, lemon juice, and minced garlic together in a small bowl. Season with sea salt and freshly cracked pepper, to taste then mix well until thoroughly combined. Cover and place into the refrigerator so the flavors can mingle.

Gently combine the ground turkey with the roasted bell pepper, kalamata olives, onion, parsley, feta, garlic,  oregano, basil, crushed red pepper flakes, sea salt and freshly cracked pepper, to taste, together with your fingers in a bowl until well mixed. Form into 4-5 patties.

Heat a large skillet with the olive oil and a bit of cooking spray. Once the pan is hot, place the turkey patties into the pan and cook for 6-8 minutes then flip over and continue cooking for 4-5 minutes, or until cooked through.

Toast the buns if desired. Spread some dill garlic mayonnaise on the bottom bun then place some lettuce on top followed by the turkey burger, add a little more mayo if desired followed by a thick slice of tomato and the remaining bun. Serve immediately. Enjoy!

Garlic Dill Mayonnaise:

1/3 cup Mayonnaise
2 tbsp fresh dill, minced
Zest and juice from 1/2 a lemon
1-2 clove(s) garlic, minced
Sea salt and freshly cracked pepper, to taste

Burgers:

1 lb ground turkey
2 tbsp roasted red pepper, finely diced
2 tbsp kalamata olives, finely diced
2 tbsp sweet yellow onion, finely diced
2 tablespoons minced fresh parsley
2 tbsp feta cheese
1 clove garlic, minced
1/2 tsp dried oregano
1/2 tsp dried basil
Pinch of crushed red pepper flakes
Sea salt and freshly cracked pepper, to taste
2 tsp olive Oil
Burger buns

Lettuce
Tomato slices

Buffalo Turkey Burgers with Blue Cheese Broccoli Slaw

It’s 80° today, perfect day for grilling so I thought I would highlight this recipe from the archives. Turkey burgers with a cayenne pepper kick! Here’s a fun way to turn boring turkey burgers into something with a little more exciting. If you’re a buffalo wing fan, you’ll love the flavors in this turkey burger topped with a broccoli slaw tossed with my very own homemade blue cheese dressing[1].

Someone recently emailed me and gave me this idea, she took my zucchini turkey burger recipe[2] and dipped it in hot sauce after. I decided to add it to the turkey meat instead, and figured you can always serve more on the side if you wish!

And by the way, there’s carrots in these burgers but I promise, you can’t even tell. It’s a great way to add more fiber and vegetables into your diet whether it’s for yourself or your family.

I’m a bit of a wimp when it comes to spicy food, so Frank’s hot sauce is perfect for my taste, but if you really like it hot you could use Tabasco or your favorite cayenne hot sauce.

To make these burgers gluten free, you can sub the breadcrumbs for gluten-free oats.

Ingredients:

  • 1 1/2 cups broccoli slaw
  • 1/4 cup skinny blue cheese dressing[3]
  • 1.25 lbs 93% lean ground turkey
  • 2/3 cup grated carrots (grate in food processor) 
  • 1/4 cup seasoned whole wheat breadcrumbs 
  • 1 clove garlic, grated 
  • 1 tbsp red onion, grated
  • 1/4 cup Franks Hot Sauce
  • salt and fresh pepper
  • oil spray
  • 5 slices reduced fat cheddar
  • 5 whole wheat burger buns (I used Martin’s 100 calorie Potato Whole Wheat Buns)

Directions:

In a medium bowl combine broccoli slaw and skinny blue cheese dressing. Set aside.

In a large bowl, combine ground turkey, carrots, breadcrumbs, garlic, onion, hot sauce, salt and pepper. Makes 5 equal patties, 5.5 oz each.

Heat a large skillet on high heat. When hot, lightly spray the oil. Add burgers to the pan and reduce the heat to medium-low.

Cook on one side until browned 4-5 minutes, then flip. Cook another 4 minutes or until burgers are cooked all the way through (keep heat medium-low to prevent burning); top with cheese and place on a toasted burger buns topped with broccoli slaw.

If grilling, clean grill well before cooking and spray with oil spray to prevent sticking.

Freezer Tip: To freeze raw, place them on a baking sheet with wax paper in between, when frozen transfer to ziplock bags.

To freeze cooked, you can fully cook them, then freeze in ziplock bags for quick meals; to re-heat you can microwave or thaw first then place on a skillet.
