Taking a Break

I was playing around with some pulled sugar for an upcoming dessert video, and it reminded me just how much I dislike those ever-popular, themed cake battles on the food networks. In case you’ve never seen one, I thought I’d take a little break and describe what happens…in every episode: “Contestants, please make a cake that looks like a working Victorian merry-go-round if his pulled sugar breaks, the entire design will collapse… he’s almost to the judge’s table… it’s starting to wobble… [BEEP]… well, that’s a real shame.”

Mixed Green Salad with an Italian Vinaigrette

I wanted to serve a salad with the Italian Chili[1] and the Parmesan-Corn Bread Muffins[2] so I went in search of finding a good Italian vinaigrette to toss with a simple green salad.  After being inspired by several different recipes I decided to create one myself.  It was simple and delicious vinaigrette tossed with the mixed greens, cucumbers, tomatoes, croutons, and shaved Parmesan cheese and it paired perfectly with the chili and corn bread muffins.

Combine the canola oil, olive oil, red wine vinegar, minced garlic, sugar, oregano, basil, dried mustard, onion powder, paprika, and sea salt & freshly cracked pepper, to taste, together in a small bowl.  Whisk until well combined.  Set aside for flavors to mingle – at least 30 minutes.

Place a mixture of romaine and mixed greens together in a bowl then top with grape tomatoes, diced cucumbers, croutons, and shaved Parmesan cheese.  Drizzle the top with the Italian vinaigrette then toss to coat evenly.   Serve immediately.  Enjoy.

Yield: 4

Prep Time: 10 min.

Total Time: 10 min + 30 minutes for the flavors to mingle



Ingredients:

Italian Vinaigrette:

1/4 cup of canola oil
2 tbsp of olive oil
3 tbsp red wine vinegar
2 cloves of garlic, minced
1 1/2 tsp of sugar (more if desired)
1/2 tsp of dried oregano
1/2 tsp of dried basil
1/4 tsp of dried mustard
1/4 tsp of onion powder
1/4 tsp of paprika
Sea salt and freshly cracked pepper, to taste

Mixed Green Salad:

2 cups of romaine lettuce, chopped
2 cups of mixed greens
Handful of grape tomatoes
1 cucumber, peeled, seeded, and diced
1/4 cup of croutons
Shaved Parmesan cheese

Directions:

Watermelon Agua Fresca – It’s Like Water, But Fresher!

“Agua Fresca” translates to “Fresh Water,” which is kind of
funny, since it’s made mostly from fresh fruit. Sometimes I do extensive
research into why something has a certain name, but this time, because it’s too nice to stay inside surfing on a computer, I’m just going
to speculate.


I’m guessing that back in the day before modern plumbing and
refrigeration, water may not have always been the best tasting beverage around.
Drinking wine and beer all day is a fantastic alternative, but not necessarily when
you have things to do, and empires to build.

So, they took some stale, tepid water, and freshened it up
with some nice cold, sweet fruit. You have to admit, that sounds pretty plausible. Anyway, that’s my story and I’m sticking to
it. The bottom line is, there’s really nothing quite as restorative and
refreshing on a sweltering summer day. I hope you give this delicious agua fresca a try soon. Enjoy!


To make 2 quarts Watermelon Agua Fresca:
5-6 cups freshly scooped watermelon
2 cups cold water
enough simple sugar syrup to sweeten to taste (recipe as
follows)

Simple Syrup:
1/2 cup sugar
1/2 cup water
(you can make any amount by simply using a 1 to 1 ratio, and
heating until the sugar dissolves)
