Perennial, the vegan startup that thinks about the health of the over 50s – Italian Cuisine

Perennial, a recently coined term, does not mean all those who do not fit into the definition of Millenial, but rather a broad category of mature, flexible people, in step with the times and with friends of all ages. It is precisely with regards to their health and that of the over 50s that the new Perennial vegetable drink was patented. This new drink, in fact, combines the "power of plants"And their extraordinary properties to one unique nutritional formula, for a natural, refreshing and purifying result, capable of eliminating harmful substances such as lactose and cholesterol and increasing vitality, mental acuity and digestive capacity. As stated on the Perennial website this product is a true cure-all for the intestine, the brain and bones. A mixture of four proteins improves digestion and provides useful amino acids for the muscles, the protein fiber helps absorb calcium and fortify the bones and finally an ingredient based on algae and vitamins contributes to brain health. This drink is also like so many others vegan and plant-based milk alternatives on the market, it has been designed as a supplement to a healthy diet and for a target of consumers still able to eat full meals.
Not least this new "vegan milk", thanks to the presence of almonds and pea proteins, is not only good for health, but has a pleasant, creamy and enveloping taste.

Perennial has announced that this super-drink will soon be for sale online, a purchase method considered more suitable for the chosen target, and that other news will soon follow.

The founders of the startup said they had the idea after observing the interest and curiosity of their parents towards plant-based drinks, so popular in this period. An American startup launches edible straws with algae – Italian Cuisine


An American startup, Loliware, launches the straw of the future, an innovative, ecological and above all edible product made with algae

The disposable use of plastic straws and their damage in environmental terms have become a topic of global interest, so much so that some countries and cities have not only banned their use in restaurants and bars but are also adopting eco-friendly alternatives. Also in the United States, where according to the Plastic Pollution Coalition more than 500 million disposable straws are consumed a day, something is moving, between proposed laws and the promotion or launch of straws made with sustainable materials such as steel or bamboo. However, one of the recent and most interesting innovations comes from an American startup, the LOLIWARE, which launched those promise to be the cnests of the future.

An eco-friendly straw to eat

LOLIWARE, a New York startup whose team includes industrial designers and scientific experts in the food and sustainability sectors, is the first company in the world to have patented a straw that is not only ecological but also edible. This product, similar in appearance to the usual plastic straws, is in fact 100% plastic-free, sugar-free, gluten-free, GMO-free but above all it is based on algae. This vegetable ingredient, in fact, besides being a super food, is a natural regenerative resource capable of capturing CO2, renewable and sustainable. The LOLIWARE has also designed these innovative canes so that they have the same functionality that is expected from a plastic straw, that is a 24-hour duration in a beverage and a generic maximum duration of 24 months.

The green mission of LOLIWARE

As we have seen, the environmental impact of using straws in the world is a very serious problem, and alarming numbers prove it; every day in the world one billion plastic straws are used, and most of them end up in the oceans, with disastrous consequences for animals, but also for the environment. The plastic materials used daily, which take hundreds of years to decompose, represent 70% of the polluting waste in the oceans. The objective of LOLIWARE is to stem the problem, with a unique and alternative product that is "ipercompostabile", Or capable of rapidly disintegrating without any consequences for the ecosystem of the seas and oceans and for the environment in general. The company said it intends to produce 30 billion straws by 2020, hoping one day to replace the 500 million plastic straws that are used and discarded every day in the United States, especially in places with a high concentration of waste such as stadiums, fast food and cafeterias. Currently their straws can be pre-ordered on Kickstarter and Indiegogo crowdfunding sites, but we expect and hope that they will soon be on the market, revolutionizing our bad habits of using non-recyclable plastics.

A startup is creating the first vegan mozzarella in the laboratory – Italian Cuisine


The startup New Culture is realizing in the laboratory the first vegan and sustainable version of fresh cow's milk mozzarella, an innovative, healthy and ethical food

In recent years the world-famous success of vegetable and vegan cheeses showed that these innovative products are not just a temporary food trend but rather a consolidated and rapidly expanding food market. In fact, beyond the homemade recipes of vegan cheeses that have long gone crazy on the web, between food blogs, Instagram accounts and video-tutorials, companies specializing in this type of food are growing and the varieties on the market are always better, original and complex. Despite this turmoil, no one had however attempted to create vegan cheeses in the laboratory. In fact, this primacy goes to one Australian startup who, following in the footsteps of other food startups around the world, has recently launched the first lactose-free fresh vegan mozzarella made in the laboratory, guaranteeing taste and sustainability. This special cheese is now being tested and "tasted", but you can bet on its future success and in general on the beginning of a great change in this sector.

The first cow's mozzarella … without a cow

Cook vegan mozzarella at home requires simple preparation and easy-to-find ingredients. The recipe can be made using various products based on soy or rice such as yogurt, milk, ricotta, cream and butter, or starting from a classic cashew base, used for many vegetable cheeses, all combined with natural thickeners such as agar , potato starch, lemon juice, as well as various seasonings such as shallots, dried garlic and flake food yeast.

There New Culture New Zealand startups, currently incubated at IndieBio, the largest biotech acceleration program in the world that previously supported Memphis Meats, Finless Foods and many others, is working on an absolutely unique vegan fresh mozzarella. In fact, in this laboratory cheese, there are not only vegetable ingredients present, but also some essential milk proteins known as casein proteins, sustainably reproduced thanks to science and technology, similar to the heme animal protein recreated in the process of the known Impossible Burger. Once ready, the casein protein is mixed with the vegetable based lipids and sugar, so as to give life to a cheese that is vegan, but completely similar in taste and mozzarella shape. In addition to delicious taste and rich, this food is ethical and free of lactose and cholesterol. The fresh vegetable mozzarella, still being tested, should be launched on the market in just over a year, but the New Culture already announces that it could only be the first in a long series of experiments.

The advantages of New Culture vegan mozzarella

As carefully illustrated on the site, the New Culture also sheds light on a long series of advantages of its fresh cheese. Unlike the vaccine, in fact, the laboratory one requires little water against the thousand liters that requires a liter of animal milk, does not require the use of land or high quantities of food necessary to feed the animals, does not contribute to the emission of greenhouse gases and animal suffering (think that every year over 56 billion farm animals are killed) and, not least, does not cause dairy allergies. In short, this plant-based cheese seems to have all the right credentials to constitute an important piece in the research and development of the much loved vegan cheeses.
