Zucchini Noodles (Zoodles) with Lemon-Garlic Spicy Shrimp

Spicy shrimp with garlic, zucchini noodles, tomatoes and a squeeze of lemon juice – I just inhaled this EASY low-carb, gluten-free, paleo-friendly dish for lunch which took less than 20 minutes to make, start to finish and it was DELICIOUS!

Today it’s finally starting to feel like Spring! Before you know it, summer will be here and you know what that means…. bathing suit season! I’ve been diligent about working out a few times a week, but you know what they say – great abs start in the kitchen and this so true so now that winter is over, I’ve been cutting back on my carbs (not eliminating, don’t worry!) and really making my calories count.

In this dish, rather than using pasta, I swapped it for zucchini noodles. My Paderno Spiral Vegetable Slicer[1] is my all time FAVORITE cooking gadget. It’s the easiest way to make zucchini noodles, sweet potato spirals, carrot ribbons and more! Prior to owning one, I used my mandolin but it’s so much quicker and easier (and safer) with this fun gadget – you NEED one!!

Spicy Shrimp with Chilies and Garlic

Sauteed shrimp with garlic, dried chilies and lemon juice – it’s spicy, garlicky, acidic and sooooo good! You can serve this as an appetizer or have this for dinner over some baby greens with a crusty whole wheat baguette. And the best part about this dish – it’s ready in under 15 minutes.

If you don’t have dried chilies, you can use a generous amount of crushed red pepper. If you don’t like spicy food, you can leave the chilies out completely. You can also make this with lime juice and cilantro for a twist of this dish, see Cilantro Lime Shrimp[1]. This is gluten-free, paleo-friendly and low calorie… but trust me, you would never know it (it’s THAT good!).

Calories: 147 • Fat: 4 g • Carb: 3 g • Fiber: 0 g • Protein: 23 g • Sugar: 0 g
Sodium: 171 mg • Cholesterol: 172 mg

Ingredients:

  • 1 1/2 pounds peeled and deveined medium shrimp
  • kosher salt and freshly ground black pepper
  • 1 tbsp extra-virgin olive oil
  • 3 to 4 dried chilies, roughly chopped
  • 5 garlic cloves, crushed
  • juice of 1 lemon
  • 3 tbsp chopped fresh parsley

Directions:

Season the shrimp with salt and pepper to taste.

Heat a large nonstick skillet over medium heat. Add 1/2 tbsp of the oil to the pan and half of the chilies and cook 1 to 2 minutes. Increase the heat to medium-high, when hot add half of the shrimp. Cook undisturbed for about 1 1/2 minutes. Turn the shrimp over and cook until opaque throughout, about 1 minute. Transfer to a plate.

Add the remaining 1/2 tablespoon of oil and remaining chilies; cook 1 to 2 minutes. Add the remaining shrimp to the pan and cook, undisturbed, for about 1 1/2 minutes. Turn the shrimp over, add the garlic, and cook until the shrimp is opaque throughout, about 1 minute. Return the first batch of shrimp to the skillet, mix well so that the garlic is evenly incorporated and remove the pan from the heat.

Squeeze the lemon juice over the shrimp. Add the parsley and toss well. Serve with crusty whole wheat bread and a salad.

Grilled Thai Sweet and Spicy Shrimp Pizza

Move over hot dogs, this sweet and spicy shrimp grilled pizza made with my Bangin’ Good Shrimp [1]recipe is so good!

I’ve had my eye on Archer Farms thin crust pizza crust for a while and thought it would be perfect to make on the grill, so when Target’s A Bullseye View[2] asked me to create a guest post for their blog, I knew exactly what I wanted to make.

Being part of the Target Inner Circle[3] I get to attend some really fun events. A few weeks ago Target set up a life sized dollhouse in the middle of Grand Central Station decorated with their Threshold home collection, how COOL is that??!

It was incredible to see this giant dollhouse in the middle of one of the busiest places in NYC!

My favorite part was their outdoor area, especially their ottomans and tables. When I went to Target to pick up all the ingredients for this pizza, I found this adorable bistro table on sale for $199 and picked up some Threshold lanterns, pillows and ottomans… LOVE!!

These ottomans make the backyard feel like an extended part of my home. But more about the pizza, for 8 servings it’s just under 300, or 8 weight watchers points plus each. If you want to try this yummy pizza recipe, head on over to A Bullseye View for the full recipe[4].
