Peanut Butter Cup Brownie Bites

We were having friends over for dinner last night, so I decided to make a treat for dessert. My friend Currié loves peanut butter and chocolate combined so when I found this recipe on Chocolate Therapy[1], I knew it would be perfect. I followed the directions except for using a mini muffin tin instead of a large muffin tin. They were the perfect little bite sized treats – they were rich, decadent, and so delicious. We all absolutely loved them, especially my kids who told me they hoped I would make these all the time.

Preheat the oven to 350 degrees. Spray a mini muffin tray with cooking spray.

In a microwave-safe glass bowl combine sugar, softened butter, and water. Microwave on high for about 45 seconds or until butter is melted. Stir in 3/4 cup semi-sweet chocolate chips until they are melted. Stir in the egg and vanilla extract, mix until well combined. Mix the flour and baking soda together, stir until combined. Add the flour mixture to the melted butter mixture, stir until well combined. Allow the batter to cool to room temperature – it takes just a few minutes. Once the batter is cool, stir in 3/4 cup milk chocolate chips and remaining 1/4 cup of semi-sweet chocolate chips. Spoon batter evenly into the prepared mini muffin cups.

Bake for 8-9 minutes or until top is set and a tester inserted into center comes out slightly wet. After brownies are out of the oven, wait for centers to fall, about 15 minutes. If the centers don’t fall, tap the centers with the back of a teaspoon to make a hole for the peanut butter.

Place peanut butter in a small microwave-safe glass bowl. Microwave on high for 20 seconds then stir. While brownies are still warm, spoon about a tablespoon full of peanut butter into the center of each brownie. Sprinkle the top with some extra milk chocolate and semi-sweet chocolate chips. Cool completely in them muffin tins.

I pack a little snack in my kids backpacks every morning along with their lunches.  I was in the process of buying some trail mix packets when I realized two things.

  1. Trail mix is expensive!
  2. I had all the ingredients for the trail mix at home in my pantry.

Needless to say, I put the trail mix back on the shelf and made some at home using what I had on hand. After looking in my pantry, I found almonds, cashews, dried cherries, dried blueberries, raisins, pistachios, peanuts, white chocolate chips, and semi sweet chocolate chips. I threw them all in a bowl and mixed them together. I gave my kids a little bowl to snack on after school and they loved it. I packaged the rest into snack sized tupperware (about 1/4 cup in each). Now I have some pre-made snacks available to throw in the kids’ backpacks in the morning and didn’t spend a fortune on them – I love that!

Combine the almonds, cashews, peanuts, pistachios, dried blueberries, dried cherries, raisins, semi sweet chocolate chips, and white chocolate chips together in a large bowl, mix with your hands until well combined. Pour 1/4 cup into tupperware containers then cover with lids. Enjoy.

Trail Mix




Prep Time: 5 min.



Ingredients:

1 cup of raw almonds
1 cup of cashews
2 tbsp peanuts
2 tbsp pistachios
2 tbsp dried blueberries
1 tbsp dried cherries
1 tbsp raisins
1-2 tbsp semi sweet chocolate chips
1-2 tbsp white chocolate chips

Directions:

Combine the almonds, cashews, peanuts, pistachios, dried blueberries, dried cherries, raisins, semi sweet chocolate chips, and white chocolate chips together in a large bowl, mix with your hands until well combined. Pour 1/4 cup into tupperware containers then cover with lids. Enjoy.

I found this recipe in a recent Everyday Food that looked perfect for my kids.  I adapted it a bit by halving the recipe, using some whole wheat flour, and mini chocolate chips because that is what I had on hand.  My family likes then under cooked a bit so they are gooey.  If your prefer them fully cooked then add a couple of minutes to the cooking time.  They turned out to be a huge hit for their after school snack and both kids gobbled their blondie up in seconds.  They said they really loved the tart cherries with the rich chocolate… I have a feeling my husband is really going to love them too.

Preheat the oven to 350 degrees.  Coat an 8×8 glass baking dish with cooking spray.

Combine the flour with the baking soda and salt then mix well.

Using a mixer, beat the sugars together with the butter until creamy and smooth.  Add the egg and vanilla then beat until mixed thoroughly.  Slowly add the flour mixture to the butter mixture until combined.  Add the cherries and chocolate chips and mix.  Pour the mixture into the prepared baking dish.

Place into the oven and bake for 28 minutes or until a tester inserted in the center comes out clean.  Remove from the oven and let cool in the pan before slicing and serving.  Enjoy.

Chocolate-Cherry Blondies




Yield: 9

Prep Time: 10 min.

Cook Time: 28-30 min.

Total Time: 38-40 min.



Ingredients:

1 cup of flour
1/4 cup + 1 1/2 tbsp whole wheat flour
2 tsp baking soda
1/4 tsp salt
1 stick of unsalted butter, softened
1/3 cup of white sugar
1/2 cup of brown sugar
1 large egg
1/2 tsp vanilla extract
1/2 cup of dried cherries
1/2 cup of mini semi sweet chocolate chips

Directions:

Preheat the oven to 350 degrees. Coat an 8×8 glass baking dish with cooking spray.

Combine the flour with the baking soda and salt then mix well.

Using a mixer, beat the butter together with the sugars until creamy and smooth. Add the egg and vanilla then beat until mixed thoroughly. Slowly add the flour mixture to the butter mixture until combined. Add the cherries and chocolate chips then mix. Pour the mixture into the prepared baking dish.

Place into the oven and bake for 28 minutes or until a tester inserted in the center comes out clean. Remove from the oven and let cool in the pan before slicing and serving. Enjoy.
