  • 500 g peeled tomatoes
  • 350 g durum wheat spaghetti
  • 2 cloves of garlic
  • 1 bunch of basil
  • fresh chilli
  • salt
  • extra virgin olive oil

Golden garlic in a saucepan with a thin layer of oil, add the tomatoes, basil, chilli and mix well.
Roll out the tomatoes on a baking sheet covered with parchment paper and bake at 110 ° C for 2 hours.
Blend finally the peeled tomatoes, pass them through a Chinese colander and let them cool.
Cook spaghetti al dente in abundant salted water.
Drain them and pour them into the casserole with the tomato sauce. Mix well, season with salt and serve with a little oil and coarsely chopped basil.

Simplicity is the great luxury of contemporary gastronomy, as I see it, luxury is eating a chocolate biscuit knowing that it is good for me, recognizing that taste that is sedimented in the memory of childhood, which refers to tradition and memories but which lives in the present updated by technology and innovation.

I like to define my research laboratory as the "scientific workshop" of my kitchens which become its creative expression.
The Niko Romito line that debuts today, certified organic and vegan, starts from the great classics of the Italian confectionery tradition: jam, chocolate cream, biscuits and fruit juices have always been the real stars of breakfasts and snacks for all of us and I wanted these products to act as standard gastronomic journey that has taste and health as its destination.

We knead with flour and salt. We can also add some boiled potatoes mash in the dough to obtain a creamier crumb and a longer lasting bread. Let rise at room temperature (20-22 degrees) until the dough doubles. So let's take it back and give it the shape of a loaf. At this point we have two possible ways: either cover the loaf with a cloth, let it rise to 80% of the volume and then bake it in a ventilated oven at 200-220 degrees, or put the loaf in the fridge and let it rise for twice the time; so I take it off an hour before cooking it and then put it in the oven. In the fridge the leavening is slower but the bread will be lighter and easier to digest. "

Finally chef Romito also gives us the idea for one fast spaghetti: "This is a dish that my mom always cooks me, spaghetti with anchovies, mint, breadcrumbs and lemon peel. Melt the anchovies (plenty with the quantity because you need to obtain a sort of anchovy paste) over low heat with a little oil, dry the breadcrumbs, grate the lemon peel and make a mince of mint.
