Maple Pecan Banana Muffins

Moist and delicious banana muffins sweetened with pure maple syrup and topped with crushed pecans – so good you won’t believe they are light!

This week has been a crazy week, for those of you who missed it I was on QVC Wednesday selling The Skinnytaste Cookbook[1]!

I was a little nervous, but honestly David is such a great host, he made it so easy. After that I flew to Pittsburgh to visit the Delallo family (I will share more about that later this week) but it feels so good to be back home in the kitchen cooking and sharing recipes.

Madison, my youngest LOVES banana muffins, so whenever I have ripe bananas on my counter I always like to bake a batch for her. Whatever we don’t eat that day is usually her breakfast the next day. In my house, these go pretty quick, but if you live alone, you can individually wrap them in plastic wrap and freeze them for a later day, then pop them in the microwave – they taste just like you first baked them.

These muffins are slightly adapted from my low fat banana nut bread[3] recipe. Here I wanted to use pecans, pure maple syrup and some maple sugar I purchased, but if you don’t have maple sugar any sugar would work. What I love about making these banana muffins is that they come out so moist, and I only use 2 tablespoons of butter in the whole batch!

Ingredients:

  • 3 medium very ripe bananas
  • 1 1/4 cups white whole wheat flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoon unsalted butter, softened
  • 1/4 cup maple sugar (or brown sugar)
  • 2 large egg whites
  • 1/4 cup pure maple syrup
  • 2 tbsp unsweetened apple sauce
  • 1/2 teaspoon vanilla extract
  • 1/3 cup crushed pecans

Directions:

Preheat oven to 325°F. Line a cupcake tin with liners.

Mash bananas in a bowl, set aside. In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter and 1/4 cup maple sugar with an electric mixer. Add egg whites, mashed bananas, maple syrup, apple sauce and vanilla; beat at medium speed until mixed well, scraping down sides of the bowl.

Add flour mixture, then blend at a low speed until just combined. Pour the batter into the prepared muffin tin.

Spread the pecans evenly over the muffins.

Bake the muffins on the center rack for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

Healthy Cookies

A healthy cookie made with just three ingredients! Mashed ripe bananas, oatmeal and walnuts. OMG, these really ARE healthy!

Cookie’s for breakfast, cookies for lunch, cookies, cookies coooookies.

I’m really so excited about these cookies, can’t you tell? Thank you, thank you to the person who emailed me this recipe[1]. It was actually a recipe for a two ingredient cookie, but walnuts and bananas really do it for me, think banana bread.. in a cookie.

The cookies are best right out of the oven, they are chewy and soft – just how I like my cookies.

I’m anxiously awaiting my next batch of bananas to get super ripe so I can make them again. This time, I’m going to add almonds and see how they turn out. Next time, maybe raisins? chocolate chips? Cinnamon, pumpkin spice, vanilla… can’t wait!

Egg free, dairy free, gluten free (use gf oats), vegetarian, vegan, kid friendly… what else can I say??

Be sure your bananas are super ripe. I’ve only tested them with quick oats, so I’m not sure how they work with rolled oats. My gut tells me stick with the quick oats.

If you’re on Weight Watchers; each cookie is 1 points plus. Quick breakfast to go; 5 cookies and a piece of fruit = 5 point plus! Leave the nuts out, they are still 1 point each. Replace the nuts with mini chocolate chips… still 1 point. Make these today!

Ingredients:

  • 2 medium ripe bananas, mashed
  • 1 cup of uncooked quick oats*
  • 1/4 cup crushed walnuts

Directions:

Preheat oven to 350°F.  Spray a non-stick cookie sheet with cooking spray or use a Silpat.

Combine the mashed bananas and oats in a bowl. Fold in the walnuts and place a tablespoon of each on the cookie sheet.

Bake 15 minutes. Makes 16 cookies.

*Use gluten free oats such as Bob’s Red Mill quick oats to make them gluten free.

Baked oatmeal with ripe bananas, pumpkin and pecans is the perfect way to start your morning!

When this first came out of the oven, I wasn’t so sure…but after my first bite I knew I had a winner!

Ever think about how perfect a banana is? My favorite way to eat them is when they are bright yellow, with no brown spots. I always throw a banana in my bag for a quick snack on the go, or after a work-out, but does that mean when they get all dark brown they are bad?

No way! I never throw bananas out… ever! Once they go start to get brown spots, I use them for smoothies[1], baked oatmeal[2], banana nut pancakes[3], banana nut cookies[4], muffins[5], banana bread[6] and more. The riper they are, the sweeter they become and if I know I don’t plan on using them right away, I freeze them for banana ice cream (recipe coming tomorrow).

This year I was thrilled to attend Dole’s first ever Banana Summit, held
in Anaheim California at Disney’s California Adventure Resort. I’m a
bit behind covering the summit thanks to Hurricane Sandy that knocked
out my power for 12 days, but I finally got my power back and was
finally able to use my oven. Hurray! 

What is a “Banana Summit” you ask? Pretty much what it sounds like, a few days with wonderful blogger friends where we literally ate, drank and experienced bananas in every way possible.

And since I’m bananas for bananas (corny, I know) I was happy to be a part of this wonderful group of people. And getting to spend a day at Disneyland made me feel like a kid again. Why Disney? Disney collaborates with many companies and one of them happens to be Dole. At the famous Enchanted Tiki Room inside the Magic Kingdom I tried my first “Dole Whip” which was as good as I heard it was. And sitting inside the Enchanted Tiki Room brought me back to my childhood trip there.

If you have ripe bananas laying around, give this baked oatmeal a try. It’s so good, it almost tastes like a banana-pumpkin nut bread. In fact, I told my toddler it was cake, and she ate it (cold).

Ingredients:

  • 3 medium ripe bananas, (the riper the better) sliced into 1/2″ pieces
  • 1 cup canned pumpkin
  • 1 tbsp honey
  • 3 tbsp brown sugar
  • 1 cup uncooked quick oats
  • 1/4 cup chopped pecans
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1 cup fat free milk (or any milk you desire)
  • 1 egg
  • 1 tsp vanilla extract

Directions:

Preheat the oven to 375° F.  Lightly spray a 8 x 8″ or 9 x 9″ ceramic baking dish with cooking spray; set aside.

Arrange the banana slices in a single layer on the bottom of the ceramic dish. Sprinkle 1/4 tsp of the cinnamon, honey and cover with foil. Bake 15 minutes, until the bananas get soft.

Meanwhile, in a medium bowl, combine the oats, half of nuts, baking powder, remaining cinnamon, pumpkin pie spice, nutmeg and salt; stir together.  In a separate bowl, whisk together the pumpkin, brown sugar, milk, egg, and vanilla extract.

Remove the bananas from the oven, then pour the oat mixture over the bananas.

Pour the pumpkin mixture over the oats, making sure to distribute the mixture as evenly as possible.  Sprinkle the remaining nuts over the the top.

Bake the oatmeal for about 30-35 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven.
