Pumpkin Chunkin

Just in case our recently featured pumpkin cheesecake isn’t your thing, here are some additional ideas as we head towards the Thanksgiving holiday. It’s kind of a mystery why we only enjoy these recipes this time of year, since they’re all made with available-anytime ingredients, but whatever it is, it’s probably the same reason people don’t make s’mores in the winter.

Anyway, I hope you give some of these great pumpkin recipes a try soon, while there’s still time. Just click on the recipe title links, and away you go. Enjoy!

Pumpkin Pancakes

It’s a crime these aren’t a regular item on diner menus.

Pumpkin Scones

There are some colors that only occur with food, and this is one of them. Look for “pumpkin scone” on a paint chip near you.

Best Pumpkin Pie Ever

Since no one can prove otherwise, my legal team is fine with this recipe’s outrageous claim.

Low Fat Pumpkin Flan

There are some things that just shouldn’t work, but they do, and sometimes those things are low-fat flans.

Pumpkin Cinnamon Rolls

You can pretend these are healthier for you than regular cinnamon rolls, since they’re made with nutritious pumpkin, but we know the truth.

Pumpkin White Russian

Pumpkin White Russian

by Pam on November 4, 2013

My sister introduced me to a delicious new drink while she was visiting. It was a pumpkin flavored White Russian and it was delightful. It was quite simple to make and tasted heavenly. My sister has a sweeter tooth than I do so she used one shot of the pumpkin pie cream liqueur while I only used half a shot. I am looking forward to making these again and again – especially on Thanksgiving. Thanks for the tasty drinks Dana! Also, a HUGE thank you to my husband for taking these pictures while I made dinner. Thank you Chad!!

Fill a tall glass with ice cubes. Add 1 shot of  Whipped Cream Vodka, 1 (or 1/2) a shot of Pumpkin Pie Cream Liqueur, and fill with milk, to taste. Stir well and serve. Enjoy.

Side Note: The pumpkin pie liqueur is great by itself over ice or added to coffee.

Skinny No-Bake Peanut Butter Pie

Light and creamy and ever so addicting! Whip this up in minutes for a dessert everyone will love. It’s Peanut Butter Lover’s Day (who knew!) so I thought I would revive this from the archives, one of my favorite desserts!

I don’t know about you but I love pie! Fruit pies, banana pie[1], pumpkin pie[2], pudding pies, and high on my list… peanut butter pie. To keep it light I used Better n’ Peanut Butter[3] which is available at Target, Trader Joe’s, health food stores and online[4].

Drizzle the top with a little chocolate syrup right before serving and you will enjoy each and every last bite!

Ingredients:

  • 5 oz reduced fat cream cheese, softened
  • 1/2 cups confectioners’ sugar
  • 1/3 cup Better n Peanut Butter[5]
  • 8 oz fat free frozen whipped topping, thawed (or truwhip[6] for healthier option*)
  • reduced fat graham cracker pie crusts
  • 3 tbsp Hershey’s chocolate syrup

Directions:

Beat cream cheese and confectioners’ sugar together in a medium bowl.

Mix in Better ‘n Peanut Butter and beat until smooth. Fold in whipped topping.

Spoon into graham cracker pie shell; cover, and refrigerate until firm, at least 2-3 hours. Drizzle with chocolate syrup before serving.

Note: For an all natural whipped topping option, look for truwhip[7].  It contains neither high fructose corn syrup nor hydrogenated oil. Their website has a store finder[8] so you can locate it at a store near you.
