Chocolate-Peanut Butter Granola Apple Bites

Chocolate-Peanut Butter Granola Apple Bites

by Pam on September 15, 2013

I was trying to find a fun and quick after school treat that would put a smile of my kids’ faces. I found this recipe by The Comfort of Cooking[1] that looked perfect and I just happened to have all the ingredients I needed on hand. I threw these apple wedges together in no time and my kids happily gobbled them up with cold glasses of milk. They LOVED these apple wedges and asked for more the following day. Thanks for the great recipe Georgia!

Cut apple into wedges. Carefully coat the tops of the apple wedges in peanut butter. Next, sprinkle the top of each wedge evenly with granola. Drizzle the top with chocolate syrup. Place onto a serving tray and serve immediately. Enjoy.

Apple Slice ?Donuts?

Apple Slice “Donuts”

by Pam on October 7, 2014

My kids have never loved apple slices so much. I surprised them today with this fun and tasty after school snack. I loved that they were eating fruit and they loved that they were “frosted” with peanut butter and topped with either sprinkles or mini chocolate chips. The apple slice “donuts” disappeared quickly and put huge smiles on my kids’ faces.

Slice the apples crosswise. Use a small knife or the end of a pastry tip to cut out a circle in the center of each slice. Pat the slices with a paper towel (so the peanut butter will spread easily) then spread some peanut but on top. Sprinkle the top with mini chocolate chips or sprinkles. Serve immediately. Enjoy.

That’s goodtoknow

Make Thai grilled vegetables to go with the burgers by marinating asparagus, spring onions, red peppers and sliced courgettes in a mix of coconut milk, peanut butter, Thai fish sauce and light soy sauce for 30 mins, then cooking under a medium grill.

Method

  1. Put all the ingredients except the pork into a food processor and whizz to a paste.
  2. In a large bowl, combine the pork and Thai paste together with your hands.
  3. Divide into four balls, then shape into burger patties with the flats of your hands.
  4. Heat a little oil in a frying pan and cook the burgers for around 12-15 mins, flipping every minute to ensure they are evenly cooked all the way through. Serve on ciabatta rolls.
