Orzo with Garlicky Roasted Tomatoes and Parmesan

I wanted a simple and tasty side dish to serve with the chicken I was making for dinner. I was craving roasted tomatoes so I decided to serve them tossed in orzo. I poured the cooked and drained orzo directly in the pan I roasted the tomatoes in so it would get flavored by all the garlic and tomato juices. I tossed the orzo and garlicky roasted tomatoes with some fresh parsley and topped it with shredded Parmesan and simply seasoned it with sea salt and freshly cracked pepper. It was such a simple and perfect side dish that we all loved.

Preheat the oven to 400 degrees. Add the grape tomatoes, minced garlic, olive oil, sea salt and fresh cracked pepper, to taste, in a baking dish. Toss to coat evenly.

Roast in the oven for 10 minutes, stirring them occasionally,  until plump and ready to about to burst. Remove from the oven.

While the tomatoes are roasting, prepare the orzo in boiling water, per instructions. Drain the orzo then pour the pasta directly into the baking dish.  Add the fresh parsley then season with sea salt and freshly cracked pepper, to taste. Toss to coat the orzo evenly with the tomatoes, their juices, and the minced garlic. Taste and re-season if needed. Pour into a serving bowl and sprinkle with Parmesan cheese. Serve immediately. Enjoy.

Cook Time: 10 – 15 min.



Ingredients:

1 1/2 cups of grape tomatoes
2-3 tsp olive oil
2 cloves of garlic, minced
Sea salt and freshly cracked pepper, to taste
3/4 cup of dried orzo, cooked per instructions
1 tbsp fresh parsley, chopped
Parmesan cheese, shredded, to taste

Directions:

I am sorry I didn’t post my normal Monday recipe but I was feeling terrible on Sunday with a nasty headache, stuffy nose, & sore throat so I didn’t have it in me to cook or do a blog post. Thankfully, I am feeling better today but still not 100%.  My daughter is getting over a cold and my son now is coughing and has a stuffy nose – you’ve gotta love the back to school germs!!  Even though it’s nearly 90 degrees outside, I decided to make us a big batch of soup in hopes that it will make us all feel better.  I grabbed whatever I had on hand which ended up being spinach, tomatoes, carrots, celery, onions, lots of  garlic, turkey Italian sausage, orzo, and chicken broth.  It was quick to make and only simmered for 1 1/2 hours so my house didn’t get too hot.  I loved how simple this soup was to make and how comforting and delicious it tasted.  The best part is that both of my kids requested leftovers for their school lunches – I love that!

Heat the olive oil in a large Dutch oven over medium heat.  Add the onion and the turkey Italian sausage and cook, stirring often, until the sausage has cooked through.  Side Note:  Use a potato masher to break up the Italian sausage quickly and easily into crumbles.  Add the  carrot, celery, and minced garlic; stir often for 2 minutes.  Add the diced tomatoes, chicken broth, bay leaf, chicken bouillon granules, and season with sea salt and freshly cracked pepper, to taste.  Cover with a lid and let the soup simmer for 1 1/2 hours, stirring occasionally.

Add the orzo and simmer for 15 minutes.  Add the spinach right before serving.  Taste and re-season if needed.  Enjoy.

1 small sweet yellow onion, diced
3 turkey Italian sausages, casings removed
3 carrots, diced
3 celery stalks, diced
5 cloves of garlic, minced
1 15oz can of diced tomatoes, drained
8 cups of chicken broth
3 tsp chicken bouillon granules
1 bay leaf
Sea salt and freshly cracked pepper, to taste
1 cup of orzo
2 cups of baby spinach, chopped

Directions:

Heat the olive oil in a large Dutch oven over medium heat. Add the onion and the turkey Italian sausage and cook, stirring often, until the sausage has cooked through. I wanted to make a light and simple side dish to pair with the Dijon and Herb Panko-Crusted Halibut[1] and the Green Beans with Lemon and Garlic[2] I was serving for dinner. I had basil and parsley as well as tons of garlic so I decided it add them to some orzo. The herbs and garlic gave the simple pasta a nice flavor boost. We all really liked this orzo and thought it went really well with the fish. My kids squeezed lemon juice on top of theirs and said it was extra tasty.

Boil salted water over high heat. Add the orzo and cook it per instructions. Drain reserving 1/4 cup of cooking liquid.

Heat the olive oil in the same pot. Add the garlic and cook, stirring constantly, for 1 minute. Add the drained orzo back to the pot and a bit of the reserved cooking liquid. Stir then season well with sea salt and freshly cracked pepper, to taste. Add the fresh parsley and basil then toss to coat evenly. Taste and re-season if needed or add more reserved water if dry. Serve immediately.

1 cup dry orzo, cooked per instructions
1 tbsp olive oil
1-2 cloves of garlic, minced
2 tbsp fresh basil, chopped finely
1 tbsp fresh parsley, chopped finely
Sea salt and freshly cracked pepper, to taste

Garnish options:
Finely grated Parmesan cheese
Lemon wedges

Directions:

Boil salted water over high heat. Add the orzo and cook it per instructions. Drain reserving 1/4 cup of cooking liquid.

Heat the olive oil in the same pot. Add the garlic and cook, stirring constantly, for 1 minute. Add the drained orzo back to the pot and a bit of the reserved cooking liquid.
