Dark chocolate and mallow brownies

Dense and truffley in texture, these brownies are finished off with a lightly fluffy topping of marshmallows and a drizzle of chocolate sauce for extra indulgence. Deliciously chocolately, this easy recipe will make an impressive dessert

Ingredients

  • 100g 70% cocoa chocolate
  • 130g unsalted butter
  • 350g dark brown sugar
  • 4 medium eggs, beaten
  • 130g self raising flour
  • 100g mini marshmallows
  • Chocolate sauce to drizzle

These brownies taste even better the day after baking, so once they have cooled, wrap up the tin and store for 24 hours before slicing as above. For more chocolate flavour, add 75g milk, plain or white chocolate chunks to the mixture with the flour.

Method

  1. Pre-heat oven to 180°C/350°F/Fan 160°C/Gas Mark 4. Grease and line a 30 x 20cm rectangular cake tin with baking parchment. Break the chocolate into a heatproof bowl; add the butter and set over a saucepan of barely simmering water until melted. Remove from the water, stir in the sugar; cool for 10 mins.
  2. Gradually whisk in the eggs to make a thick glossy mixture. Sift the flour on top and carefully fold the ingredients together until well combined.
  3. Transfer to the prepared tin, smooth the top and bake in the oven for about 30 mins until the mixture is risen, has a slight crust yet is still slightly soft underneath. Scatter or arrange the marshmallows on top and leave the brownies to cool in the tin.
  4. To serve, slice into 15 portions and drizzle with chocolate sauce.

favorite dessert, but if he had to pick one, I think a lot of fathers would go
with s’mores – the campfire classic that inspired this frozen Father’s Day
dessert.


S’mores are a simple, yet brilliant treat that represents
everything most males, dads or otherwise, seem to love. It’s made over a
crackling fire, the building of which triggers the release of all kinds of
manly neurotransmitters in the brain. The same goes for sharpening sticks with knives,
impaling things, and burning stuff.

And while you’re not experiencing those primitive pleasures
here (except for the blowtorch, which is never not awesome), I think just the
connection with the venerable s’more alone will be enough to have dad loving
this pie.


If not, there’s always the crispy, buttery graham crackers,
chocolate ice cream, and toasted marshmallows to make him proud of you anyway.

6 tbsp melted butter

Happy Valentines Day!!  

I wanted to make my kids an extra special after school snack to celebrate Valentines Day this year. I decided to make them some rice crispy treats cut into heart shapes and decorated with gel frosting and sprinkles. Thankfully, my son didn’t mind that they were pink because they tasted so good. These fun and delicious treats took me less than an hour to make and put a HUGE smile on my kids’ faces. You can’t beat that!

Place the butter in a large pot over medium heat. Add several drops of red food coloring and stir occasionally until the butter is completely melted. Add the mini marshmallows to the pot and cook, stirring constantly, until melted. Add more red food coloring until you reach your desired color.

Once the marshmallows have completely melted, remove from the heat and add the rice krispies and stir  until evenly coated with the melted marshmallows  Coat a large 9 x 13 baking dish with cooking spray then pour the mixture into the baking dish. Spray a piece of wax paper with cooking spray, then use the paper to mash the rice krispie treats down into the dish evenly.

Let it cool for 5 minutes before using cooking cutters to cut into heart shapes.  Decorate with gel frosting and sprinkles.

Serve to your special little Valentines’ and watch their faces light up. Enjoy!

6 cups of Rice Krispies
Gel frosting
Sprinkles
