First open the vanilla bean, pull the seeds away with the blade of a knife, put the seeds and pod in a saucepan with the milk and bring to the boil.
In the meantime, whip the egg yolks with the sugar, then add the cornstarch first and then the milk, after removing the vanilla bean.

Once mixed evenly, transfer everything to a container suitable for microwave cooking, then cook for 2 minutes at 700W.

Taking care not to burn yourself, take out the container (the cream will still be very liquid, don't worry, it's normal) and mix with the whisk.
Put in the microwave and cook for another 2 minutes, always at 700 W.
Always taking care not to burn yourself, take the container back and work again briefly with the whips (or if you prefer also with an immersion blender) to make your cream smooth, uniform and silky.

The microwave custard is ready: once you have reached the perfect consistency, let it cool with contact film and then use it for all your preparations.

The recipes

180251Pumpkin velouté with olive crumble
INGREDIENTS:
• 500 grams of pumpkin
• 1 clove of garlic
• 200 grams of chestnuts
• a few sprigs of thyme
• extra virgin olive oil
• salt and pepper
For the crumble:
• 200 gr pitted green olives
• salt

METHOD:
– Chop all the ingredients.
– Place the mixture in the private griddle steamer and start cooking.
– At the end, blend all the steamed ingredients. The microwave must be used at a power of 750 W for a duration of 15/18 minutes.
– To make the dough even creamier, we recommend adding water.

INGREDIENTS:
• 100 gr almond flour
• 250 gr of 00 flour
• 1 vanilla stick
• 150 gr of cane sugar
• 3 eggs
• 125 gr butter
• 1 tablespoon of bitter cocoa
• milk to taste
• 1 pinch of salt
• for citrus gel
• 300 ml of citrus juice
• 15 gr of cornstarch

METHOD:
– Prepare the citrus gel in the private steamer of the grill, mixing all the ingredients and
starting them to cooking.
– Melt the butter in a small bowl for about 1 minute, power 750W.
– Mix all the rest of the ingredients in a bowl.
– Pour the mixture into the Crisp cake pan with a high rim and cook for about 8 minutes.

Easy “Squeezy” Corn on the Cobb

I saw this technique on the Huffington Post a while back, and while it wasn’t the first time I’d seen, or used the micro-method, it was the first time I’d seen it in video form, thanks to the lovely and talented, Carl Blemming. By the way, I’m assuming Huff Po didn’t pay him anything for it, so to make up for that, neither will we.


This proves something that I’ve known for years…no matter how great a kitchen technique is, unless you use it regularly, you’ll forget about it. Usually, as soon as I get home from the store, I shuck the corn, and go from there, but as soon as I saw that ear go into Carl’s microwave, it all came back. Now I can forget about it all over again.

I’ve heard through the grapevine that some other food channels have also published this “hack” recently, but since I don’t watch anyone else, I can’t confirm those reports, but I couldn’t have been the only one. The point is, it works. It works perfectly, and I hope you give it a try soon. Enjoy!
