Strawberry Sauce

My kids absolutely love their pancakes, waffles, french toast, or crepes topped with strawberry sauce (they get this love from their Papa Loren, who LOVES strawberry sauce too). I made a batch this weekend and needless to say, they LOVED it! This sauce takes minutes to make and will make your breakfast treats taste so amazing. It’s really wonderful on top of ice cream too.

Heat the water, sugar, corn starch, lemon zest, and juice in a saucepan over medium heat, whisk until well combined. Add the sliced strawberries and stir often, mashing some of the berries, for 5-7 minutes. Remove from the heat and let it cool for a few minutes before serving. Enjoy.

Strawberry Sauce




Prep Time: 5 min.

Cook Time: 5 min.

Total Time: 10 min.



Ingredients:

1/4 cup of water
1/4 cup of sugar (less if the berries are really sweet)
1 tbsp cornstarch
Zest and juice from 1/2 a lemon
16 oz of fresh strawberries, cleaned, hulled, & quartered

Directions:

Heat the water, sugar, corn starch, lemon zest, and juice in a saucepan over medium heat, whisk until well combined. Add the sliced strawberries and stir often, mashing some of the berries, for 5-7 minutes. Remove from the heat and let it cool for a few minutes before serving. Enjoy.

It’s been so hot here in Oregon this week so I decided to cool my kids down with these smoothies. They took minutes to make and my kids were thrilled! They said they were the best smoothies ever! They loved the bits of shredded coconut in each sip. I happen to have enough ingredients for another batch tomorrow and my kids are so excited when I told them. This recipe is a keeper!

Combine the ice, coconut milk, coconut yogurt, banana, pineapple, shredded coconut, lime, vanilla, and honey together in a blender. Click the smoothie button and blend until smooth. Serve garnished with pineapple. Enjoy.

1/2 cup of light coconut milk
1/2 cup of Greek coconut yogurt
1 cup of fresh pineapple, chopped
1 ripe banana
1/3 cup shredded coconut
Juice of 1 lime
2 tsp honey, more if desired
1 tsp vanilla

Directions:

Combine the ice, coconut milk, coconut yogurt, banana, pineapple, shredded coconut, lime, vanilla, and honey together in a blender. Click the smoothie button and blend until smooth. Serve garnished with pineapple. Enjoy.

Pickle Brine Chicken – I Need to Give You Props

The chicken breasts seen herein started off as nothing more than a couple of props for our recently posted “How to Make a Brick Grillvideo, but they came out so well, I decided to show you what I think is a pretty neat trick.


And let’s face it; there aren’t a lot of great uses for leftover pickle juice. I did hear recently that some people like to drink this stuff after jogging, which I found to be quite shocking, since I had no idea people still jogged.  

As you’ll see, I only let mine brine for about 2 hours which seemed to be enough. I’ve heard that you really only need about one hour per inch thickness of meat, and that rule of thumb seems to work for me. These breasts were tender, juicy, and flavorful.

Speaking of flavor, you can probably just go with the straight pickle juice as a brine, but I hedged my bets with a little extra salt, sugar, and pepper. Like most brined recipes, the payoff is in the texture and moisture content, and not necessarily in the taste, but having said that, these did have a nice little twang.


So, the next time you have nothing left in the pickle jar but the juice, you now know what to do, and I don’t mean take up jogging. I hope you give this a try soon. Enjoy!


Ingredients for 2 breasts:
2 large boneless skinless chicken breast
olive oil to coat
salt and pepper to taste

For the brine:
1 tbsp brown sugar
2 tsp kosher salt
1 tsp freshly ground black pepper
pinch of cayenne
1 1/2 to 2 cups dill pickle juice
