Recipe Tart with fresh figs and pine nuts


  • 150 g flour
  • 100 g butter
  • 100 g sour cream
  • 20 g almonds with the skin
  • 20 g toasted pine nuts
  • 6 figs
  • 4 yolks
  • caster sugar
  • sugar cane
  • salt
  • vanilla
  • lemon

FOR THE PASTA PASTA
toast the pine nuts in a pan, let them cool and blend them together with the almonds and 1 tablespoon of granulated sugar.
Mix them with the flour and mix with the slightly softened butter, until you get a mixture of crumbs.
Incorporate another 20 g of granulated sugar and 30 g of brown sugar, then 2 egg yolks, the seeds of 1/2 vanilla pod and a pinch of salt. Wrap the dough in plastic wrap and let it rest in the refrigerator for 1 hour.
Roll out then the dough to about 5 mm thick and line a 20 cm diameter tart mold.
trimmed the edges and pinch them to create a decoration.

FOR FILLING
Jumbled up sour cream with 2 egg yolks, 1/2 tablespoon of granulated sugar, grated zest of 1/2 lemon; pour the cream obtained into the tart.
cover the surface with slices of fig, 2-3 mm thick, and sprinkle them with brown sugar. Bake at 180 ° C for 35 minutes.
Remove from the oven the tart, let it cool and complete it with other slices of fresh figs. Decorate to taste with powdered sugar, pine nuts and blackberries.

In these summer days, the high temperatures make you want fresh and light food, to be prepared in a short time, preferably without having to light the fires. Let's eat the fish safely

The fish, however to be eaten raw, must have been killed, to prevent it from developing bacteria and parasites (such asanisakis) capable of causing infections, sometimes very dangerous for health. To avoid these inconveniences, if it has not been killed by your fishmonger, leave it in the freezer for 96 hours, at -18 °: in this way you will be sure not to run into unpleasant surprises.

Different dressing, never the same taste

The nice thing about carpaccio is that it changes flavor depending on the dressing with which you will choose to bring it to the table. In the case of salmon, for example, in addition to an excellent quality extra virgin olive oil, you can choose from the juice of different citrus fruits: orange (more delicate), lemon (more pungent), lime (more refined). Even grapefruit, with its particular taste, is suitable as a dressing for your carpaccio. And then pepper (of all colors and flavors), aromatic herbs (mint, chives, basil, marjoram, lemon thyme), vegetables (leeks, celery, peppers): you really have an infinite choice of ingredients to combine with your salmon to make it different every time.

The recipe for salmon carpaccio

Get a whole piece of salmon and with your fingers massage it for the entire length, to check for any thorns. Remove them with a special pliers, pulling in the direction of the plug itself. At this point with a long and smooth blade knife cut the slices of carpaccio that you will place on a serving plate. Prepare separately an emulsion with extra virgin olive oil and lemon juice. With this, season the carpaccio, cover it with a sheet of cling film and leave it to marinate for an hour in the fridge. First serve it, garnish with a few leaves of mixed salad, a few grains of pink pepper, a pinch of Maldon salt and, if you like a spicy tone, a grated ginger.

Vittoria Ferragamo

Spaghetti with grandmother Wanda's tomato

Ingredients:

500 gr durum wheat spaghetti, 400 g of peeled tomatoes (San Marzano), 2 cloves of garlic, 2 celery stalks, 2 carrots, 1 white onion, 3 whole chillies, fresh basil, extra virgin olive oil, salt, pepper

Method:

Sauté the garlic, onion, carrots and celery stalks over a low heat until it withers. At this point add the peeled tomatoes and after a few minutes simply mash them with a fork and season with salt and pepper. Tie the peppers with kitchen string to the handle of the pan so that they are immersed in the sauce for cooking. Cook over low heat for 1 hour with the lid raised only by a wooden spoon.

In the last 20 minutes, add a large handful of fresh basil, roughly tearing the leaves with your hands. At the end of cooking, mix everything in a vegetable sieve and add the spaghetti al dente to the sauce. Mix and serve hot.

Nicola Farinetti: Russian salad and homesickness

"When we meet in the family, the dish that never fails on the table is the Russian salad of my mother Graziella. Russian salad of mother Graziella

Ingredients for 4 people:

250 g of fresh peas, 250 g of peeled potatoes, 250 g carrots, 250 g fresh green beans, 4 fresh eggs, 250 g of seed oil, 1 lemon, White wine vinegar, apple cider vinegar, salt.

Method:

Cook two of the eggs until they are firm, cut them into small pieces and set aside. Cut the vegetables into cubes of equal size (about 5 mm). Cook them separately in salted and slightly acidulated water with 10 g of apple cider vinegar for 5-6 minutes after boiling for peas, carrots and green beans, so that they remain crispy, 9-10 minutes for potatoes. Keep aside and let it cool.

Prepare a mayonnaise with 2 yolks at room temperature to which you have added half of the oil and a few drops of lemon, whipping at the same time with a whisk until the mayonnaise is firm. Then add a pinch of fine salt, the remaining oil and lemon juice. Complete with a spoonful of white wine or mustard vinegar. Season with salt and add the mayonnaise and the chopped eggs to the mayonnaise. Leave to rest in the fridge for at least two hours.

Ingredients for 8-10 people:

1 kg of black grapes, 250 g of flour, 100 g of sugar, 6 g of fresh brewer's yeast, extra virgin olive oil

Method:

Mix the flour in a bowl with a teaspoon of oil and 25 g of sugar.

Dissolve the yeast in 150 g of warm water and add the mixture to the flour. Knead until a compact ball is obtained; cover the dough with a damp cloth and let it rest for 1 hour and 30 minutes.

Divide the dough in two and roll out two discs of dough about 25 cm in diameter. Wash and shell the grapes, then distribute a layer on the bottom of a pan (diameter 35 cm). cover with a disk of pasta and sprinkle with half of the remaining sugar. Cover with the remaining berries and the second disk of pasta. Bake for 1 hour and 15 minutes, take it out of the oven and let it rest for an hour before serving.
