Edamame. What they are and how they are cooked

Edamame are i soy beans and they are a very versatile ingredient in the kitchen. In Japanese restaurants they are served with their pod as an appetizer, simply steamed and salted. It's a lot of fun to eat them because you don't use cutlery, just your hands.

A curiosity from Japan

The pod must be brought close to the mouth and then each bean is pushed out of its wrapping with the push of the fingertips. This practice considered as anti stress by the Japanese has even become a game for adults and children that is called Bandai and reproduces precisely this movement.

Edamame property

Soy beans are rich in vitamins and minerals and they are an excellent source of protein.
Edamame soy is also rich in fiber and various micronutrients and contains bioactive substances, the isoflavones, which help to reduce the risk of prostate and breast cancer and the onset of heart disease. The antioxidants they also prevent the negative effects of free radicals in the body, strengthening the immune system. The consumption of edamame is recommended for menopausal women at risk of obesity and for those on a low-calorie diet.

How to cook edamame

Soy beans are legumes in all respects and can be used in the kitchen as such. They are generally found on the market frozen and pre-cooked and just cook them for a few minutes in boiling water. Beware of prolonged cooking which damages them and makes them too soft. Their characteristic is precisely the crunchiness.
If you find them fresh and with their pod you can steam them whole and then salt them with salt flakes or coarse salt.
You can use the cooked beans for both prepare cold salads together with other legumes and seasonal vegetables or even for hot soups. Pods are generally not eaten, but if they are very small and tender, they can be used in soups and steamed vegetables.

  • 400 g 2 cucumbers
  • 300 g frozen edamame beans
  • 2 fresh spicy chillies
  • 1 spring onion (only green)
  • fresh ginger
  • lemon
  • marjoram
  • hemp seeds
  • parsley
  • extra virgin olive oil
  • salt

To prepare the green side dish with edamame beans, dip the edamame still frozen in boiling salted water, after 1 minute from the resumption of the boil drain them by immersing them in cold water to stop cooking.
Peel the cucumbers and cut one into small pieces and the other into long sticks.
Cut the green part of the onion into rounds.

season vegetables with this emulsion and completed with parsley, marjoram and hemp seeds. Decorate with cucumber sticks.

Edamame is one of our favorite side dishes to pair with Asian food. My son REALLY loves it – especially doused with soy sauce. I sautéed this edamame with a bit of butter until cooked through then added the minced garlic and crushed red pepper flakes and cooked it for an additional minute or so. I seasoned it with sea salt, to taste. Of course, my son still added soy sauce to his. It was a hit with all of us.

Heat a skillet over medium heat. Add the butter and edamame together in the skillet and mix well. Add the edamame and stir to coat evenly. Cook for 4-5 minutes, stirring often. Add the minced garlic and crushed red pepper flakes and cook, stirring often, for 1 minute. Season with sea salt, to taste then remove from the skillet and serve. Enjoy!

Note: To eat whole edamame, simply put the pod into your mouth, bite down and pull through your teeth (similar to eating an artichoke leaf), the soybeans pop out of the pod and into your mouth. Discard the pods.

Cook Time: 5-6 minutes



Ingredients:

2 cups of whole edamame
1 tbsp butter
2 cloves of garlic, minced
Crushed red pepper flakes, to taste
Sea salt, to taste

Directions:

Heat a skillet over medium heat. Add the butter and edamame together in the skillet and mix well. Add the edamame and stir to coat evenly. Cook for 4-5 minutes, stirring often. Add the minced garlic and crushed red pepper flakes and cook, stirring often, for 1 minute. Season with sea salt, to taste then remove from the skillet and serve. Enjoy!
