Spicy Shrimp with Chilies and Garlic

Sauteed shrimp with garlic, dried chilies and lemon juice – it’s spicy, garlicky, acidic and sooooo good! You can serve this as an appetizer or have this for dinner over some baby greens with a crusty whole wheat baguette. And the best part about this dish – it’s ready in under 15 minutes.

If you don’t have dried chilies, you can use a generous amount of crushed red pepper. If you don’t like spicy food, you can leave the chilies out completely. You can also make this with lime juice and cilantro for a twist of this dish, see Cilantro Lime Shrimp[1]. This is gluten-free, paleo-friendly and low calorie… but trust me, you would never know it (it’s THAT good!).

Ingredients:

  • 1 1/2 pounds peeled and deveined medium shrimp
  • kosher salt and freshly ground black pepper
  • 1 tbsp extra-virgin olive oil
  • 3 to 4 dried chilies, roughly chopped
  • 5 garlic cloves, crushed
  • juice of 1 lemon
  • 3 tbsp chopped fresh parsley

Directions:

Season the shrimp with salt and pepper to taste.

Heat a large nonstick skillet over medium heat. Add 1/2 tbsp of the oil to the pan and half of the chilies and cook 1 to 2 minutes. Increase the heat to medium-high, when hot add half of the shrimp. Cook undisturbed for about 1 1/2 minutes. Turn the shrimp over and cook until opaque throughout, about 1 minute. Transfer to a plate.

Add the remaining 1/2 tablespoon of oil and remaining chilies; cook 1 to 2 minutes. Add the remaining shrimp to the pan and cook, undisturbed, for about 1 1/2 minutes. Turn the shrimp over, add the garlic, and cook until the shrimp is opaque throughout, about 1 minute. Return the first batch of shrimp to the skillet, mix well so that the garlic is evenly incorporated and remove the pan from the heat.

Squeeze the lemon juice over the shrimp. Add the parsley and toss well. Serve with crusty whole wheat bread and a salad.

My husband was craving fish for dinner but when I went to pick some up from our local grocery store, they only had a little bit of fresh halibut left. My kids saw the Manilla clams and begged me to make those for dinner too. This recipe couldn’t be more quick and easy to make. I just sautéed some red onion and garlic together then tossed in grape tomatoes then added lemon juice , chicken broth, and seasonings. I tossed in the clams and steamed them for 5 minutes. I topped them off with fresh dill and parsley before serving. Simple, quick. and delicious! My kids devoured these clams and sopped up the liquid with some crusty bread. This recipe was a huge hit with all of us and will be on the menu again very soon.

Place the clams into a large bowl then rinse them well with water. Cover them with more water then sprinkle the top with cornmeal. Place into the refrigerator for 1 hour. Side Note: The cornmeal helps clean the clams, see here[1] for a more detailed reason.  After an hour, remove from the refrigerator, rinse, drain, and scrub the clam shells. Discard any shells that are not very tightly sealed.

Heat the olive oil a large skillet over medium heat. Add the red onion and crushed red pepper flakes to the skillet then cook, stirring often, for 3 minutes. Add the minced garlic and tomatoes, then cook, stirring constantly, for 1 minute. Add the lemon zest and juice and chicken broth to the skillet then season with sea salt and freshly cracked pepper, to taste. Add the rinsed and cleaned clams to the skillet, cover with a lid, and cook for 5 minutes, or until all of the clam shells have opened. Remove the lid and sprinkle the clams with the fresh dill and parsley. Serve immediately with extra lemon. Side Note: Discard any clams that did not open. Enjoy.

We’ve  had snow and  freezing rain for the last few days which makes the snow covered roads pure ice and very dangerous to drive on. Needless to say, we have stayed home, read a lot, watched movies, baked cookies, played in the snow, had a few snowball fights, took walks, and relaxed. I’ve been cooking lots of simple and comforting old favorites, which has been fun and tasty. The kids love having  fresh snow and no school – so do I!!

I fed the kids leftovers for lunch today but  I needed to come up with something for my lunch. I found 1 egg, a couple of mushrooms, a piece of Canadian bacon, and a hunk of extra sharp white cheddar in the refrigerator so I decided to make an omelet. I like my omelets very thin so I cook them with one egg; my husband on the other hand, prefers a thicker egg layer so I make his with two eggs. I did a quick sauté of mushrooms, ham, and spinach then made a thin egg omelet and topped it with extra sharp cheddar omelet . The omelet is delicate and delicious – seriously so good! I’ll be making this again soon.

Heat the olive oil in a non-stick skillet over medium heat. Add the mushrooms once the pan is hot. Cook, stirring occasionally, for 2-3 minutes until tender. Add the crushed red pepper flakes, ham, and spinach to the skillet and continue cooking for 1 minute. Season with sea salt and freshly cracked pepper, to taste. Remove from the skillet and set aside for later use.

Clean the skillet out with a paper towel then spray it with cooking spray. Turn the stove to medium low and turn the broiler on in your oven. Crack one or two eggs into a bowl, add the milk, and whisk until well blended; season with sea salt and freshly cracked pepper, to taste. Pour the egg mixture into the skillet and swirl so the pan is evenly coated with egg.

Once your egg is starting to set, spoon on the mushroom filling then top with the shredded cheese. Move the skillet to the oven and place on the top rack (don’t put the handle in the oven if it’s not oven safe) and let the broiler cook the top part of the egg, it takes only 20-30 seconds or so. Remove the pan and flip the other part of the egg mixture on top of the veggie mixture. Slide onto a plate and serve immediately. Enjoy.

1-2 eggs (I used one for mine)
1 tbsp milk
Sea salt and freshly cracked pepper, to taste

1 slice of Canadian bacon, diced
2 tbsp baby spinach, chopped
Extra sharp white cheddar cheese, shredded

Directions:

Heat the olive oil in a non-stick skillet over medium heat. Add the mushrooms once the pan is hot. Cook, stirring occasionally, for 2-3 minutes until tender. Add the crushed red pepper flakes, ham, and spinach to the skillet and continue cooking for 1 minute. Season with sea salt and freshly cracked pepper, to taste.
