Skinny Buffalo Chicken Strips

Quick and easy – these buffalo chicken tenderloins are spicy and delicious! I like to serve them with my homemade skinny blue cheese dressing[1] and celery sticks on the side for a hot and spicy appetizer.

But gosh, you can eat this so many ways! Serve it with baked fries[2], or make it a wrap. I think this would be an amazing side for my Sweet Potato Irish Nachos[3]!

However you decide to eat them, I am leaving it up to you! But this I promise, they are good, and it takes just 10 minutes to make!

And, if you love everything spicy buffalo as much as I do, then you’ll also love some of my other skinny dishes! Try: Spicy Buffalo Cauliflower Bites[4], Buffalo Turkey Burgers[5], Buffalo Chicken Potato Skins[6], Crock Pot Chicken Lettuce Wraps[7], Buffalo Shrimp Dip[8], Buffalo Chicken Dip[9], and my favorite, Buffalo Stuffed Chicken Breasts[10]

Grilled Kiwi & Chili-Rubbed Beef Short Ribs – Labor Day Cooking Shouldn’t Be a Lot of Work

Labor Day weekend is always a bittersweet holiday. It’s
supposed to honor America’s organized labor movement, but really what it
mostly celebrates is the end of summer.

Pretty soon our grills will be covered
by huge snow drifts, and the season’s warm breezes will be a distant memory.
Well, not for me, as I live in California, but you get the point.

This grilled kiwi and chili-rubbed beef short ribs recipe is
specifically designed with that melancholy in mind. The prep is minimal, and the ultra
short cooking time means that instead of being stuck in front of a grill, you
can actually enjoy more of these last precious summer days.

We tied the world record here for fewest ingredients in a
marinade, with one, but thanks to the kiwi’s enzymatic magic, that’s all we
need. Unlike some tropical fruit marinades, kiwi doesn’t turn the meat into
mush, and provides a nice, slightly sweet and acidic base for our Ancho chili
rub. I loved how this came out, and while highly-seasoned, the beefy goodness of the short ribs really came through.

I want to wish all of you a happy and healthy Labor Day
weekend. What better way to celebrate organized labor, than by doing the minimum
amount of it at your cookout? I hope you give these super simple, but very
delicious kiwi and chili-rubbed short ribs a try soon. Enjoy!

Ingredients for 4 portions:
2 pounds Korean-style (aka flanken style) beef short ribs
1 kiwi
For the chili rub:
1 tbsp ancho chili powder
1 tbsp sugar
1 tbsp kosher salt
2 tsp freshly ground black pepper
1 tsp garlic powder
1/4 tsp cayenne, or to taste

Italian Chili

Italian Chili

by Pam on September 9, 2012

We finally had a cool day today in Portland.  It was cloudy, cool, and a much needed break from the heat! I found a recipe at The Slow Roasted Italian[1] that looked and sounded perfect! It had a wonderful chili flavor with an Italian twist.  It smelled amazing while it simmered on the stove all afternoon and tasted even better.  My daughter, who does not like chili, actually liked this and nearly ate her whole bowl full.  My son loved it and asked for leftovers for his school lunch tomorrow.  My husband and I both really liked it too and I look forward to eating the leftovers this week. Thanks for the great recipe Donna.

Side Note:  Use a potato masher to break up the ground beef and Italian sausage quickly and easily into crumbles.

Heat the olive oil in a large Dutch oven over medium heat.  Add the ground beef and the turkey Italian sausage, removed from casings, into the Dutch oven.  Use a potato masher to break up the meat into crumbles.  Add the chili powder, dried basil, oregano, cumin, crushed red pepper, sea salt and freshly cracked pepper, to taste; cook stirring occasionally for 2-3 minutes.  Add the diced onion, bell pepper, and garlic to the meat crumbles; cook, stirring occasionally, for 3-4 minutes.  Add the diced tomatoes, tomato sauce, chili beans with sauce, and drained kidney beans.  Cover with a lid then lower the heat to low simmer.  Cook, stirring occasionally, for 2-3 hours.  Taste the chili and re-season if desired.

Ladle into bowls then top with shredded Parmesan cheese.  Serve immediately.  Enjoy.
