The magic of Casole Castle – Italian Cuisine


A small jewel in the Tuscan hills in the province of Siena surrounded, as far as the eye can see, by the orderly alternation of woods, olive groves, vineyards and fields.

Climb with placid slowness along the road bordered by cypresses, which reaches the top of the hill where the Belmond Castle of Casole. We are in Val d’Elsa, near Siena, San Gimignano and Volterra, less than an hour's drive from Florence.
The oldest part of the structure dates back to 10th century (the tower is dated 998) when there was a small village here with an oven, church, mill, warehouse for wine and oil, but the archaeological excavations in the early decades of the 1800s, commissioned by Bargagli family, owner of the estate, unearthed Etruscan finds of great importance, one of which is the Testa Bargagli, now housed in the Civic Archaeological Museum and the Collegiate Church of Casole d’Elsa.

As soon as you arrive, you can breathe that sense of quiet that gives the impression of having reached home.
The charm, unchanged over the centuries, is found in every corner and glimpse of this resort and the wind that comes from the sea gracefully caresses the hill.
Relaxation (the spa and gym are housed in some of the oldest buildings in the "village"), walks on the estate (1700 hectares of property partly cultivated under organic conditions, partly left in the woods) and good food are an unmissable trinomial.
From breakfast to after dinner, you can rely on the inspiration of chef Daniele Sera «Mine is a cuisine based on simplicity, made of a few recognizable ingredients, from the territory and beyond, processed with the utmost respect. I say my cooking, but it is not correct, because it is certainly not just me who cooks, the brigade of Tosca (the restaurant) is the real strength behind our dishes .

The Belmond Castello di Casole is a magical place and gradually reveals its wonders, but the sunset, which can be enjoyed from the terrace of the Tosca restaurant, from the tables of the Visconti cocktail bar (named in homage to the family of the director Luchino who bought it after the war) and from the wonderful infinity pool, it certainly does not go unnoticed.
Following a path made of small pebbles, you just enter the wood and under the branches of a centenary tree there is a suspended table, an enchanted table. This is the ideal place to start dinner with an aperitif based on some of the proposals «fingerCuisine: mini tacos with courgette cream, the" fake tomato ", quail egg with potato and truffle cream, beef fillet tartare with mushrooms and parmesan flakes.

The chef, of a Florentine mother and a Ligurian father, with great experiences in Italy and abroad, had no doubts when he had the opportunity to come here "Castello di Casole is a place where life follows the simple rhythms of rising and setting of the sun and the flavors are the genuine ones of the earth. In estate we produce oil and wine (Castello di Casole supplies the Italian Belmond with these two products) and soon we will also have a large one vegetable garden where to grow the ingredients for the kitchen. This year for the first time, we will have our wildflower honey for breakfasts and desserts ".
The vegetable garden is not the only project that will soon be realized, there is another, perhaps even more ambitious: to dedicate 6 tables (and a brigade on purpose) to new gourmet restaurant Di Sera which will open next year. Only in the evening, in fact, you will be able to enjoy a cuisine capable of wandering and experimenting with grace, without forgetting the roots of the territory.
To try today, without a doubt, the Ravioli with potatoes, Taggiasca olives, redfish and cacciucco sauce and the Maialino di Cinta smoked cauliflower and citrus fruits. What about next year? All that remains is to wait while anticipating future surprises.

Marina Cvetic reacted exactly this way, when in 2004 Gianni Masciarelli gave her as a gift the baronial estate of Semivicoli. For her, yes, but also for Abruzzo, because Gianni could not stand that such a historic home would be abandoned. And then Gianni was like that, he loved beauty and when he saw it or recognized it, even in power, he couldn't resist it. Always dazzled by beauty, in fact, he had begun his career as a winemaker, without knowing that he would completely revolutionize the history of Abruzzo's oenology, leaving an indelible mark. Yesterday Today and Tomorrow.

Yesterday, the Marina Cvetic line

Gianni Masciarelli, son of a housewife and a transporter, had nothing. Not even one hectare, if not that of Cabernet, not his, who could only look out of the window of the birthplace of San Martino sulla Marrucina, unaware that one day those hectares would become 350. From that window his passion for the world of wine was born , but above all the thirst for knowledge that leads him to make continuous journeys in France, his great teacher. "Passion without knowledge is nothing he said. At the end of the 1980s, Gianni decided: will make the best wine in the world, trying to enhance the local vines, based on a model of French know-how, in an Abruzzo that at the time had no awareness of its potential yet. Within just 8 years, Gianni produced 60,000 bottles (today there are more than 2 million, sold in 60 countries worldwide), the result of one sartorial study on the land. Gianni, in fact, decides to distribute his vineyards in all 4 provinces of Abruzzo (Chieti, Teramo, Pescara, L'Aquila), depending on the different territories, climates and winds, to give his wine valuable and different contributions and contributions ; all from 350 meters above sea level. In short, what Gianni Masciarelli does is to lay the foundations for a company that still benefits from his in-depth studies. And it is animated only and exclusively by the love for its territory and by the visceral desire to enhance it. When he then meets Marina Cvetic, love multiplies, touching vertiginous peaks. In 1991, he dedicated a whole line to her that bears his name: a Serbian name, which attracts attention, which is talked about, also because Montepulciano in 2000 was awarded only as the best wine in Italy. For the precious Reserve of 2016, instead, a dish has recently been specially created in honor of its combination: the rough Sfoglia alla ragù of wild boar and consommé with coffee, in that starry jewel that is Villa Maiella of the Tinari brothers, Pascal in the dining room (among the best sommeliers there is) and Arcangelo in the kitchen. And then in 2004 Gianni gave her the Castle of Semivicoli: but it was all to be restored, this worried Marina, who at the time still did not know what it would become today.

Gianni, on the other hand, had already imagined it exactly as it is today: a unique welcome home, from which to go to discover a lesser known Abruzzo, which both loved deeply. Here everything speaks of him, like roses intertwined with vines, planted everywhere as his favorite flowers. And then one still breathes all his love: his love for a woman, for a territory, for wine. A love that continues over time, even through all the weddings that are celebrated here, as well as through the intense wines that are produced. But what I tell you to do, love is something you have to experience, you can't tell. Or rather, it can be done, but up to a certain point. Then this castle must be seen and known by Marina Cvetic, because she is the key to everything. Marina, in fact, is not any, it is a tough guy. Born in Belgrade, a citizen of the world, she lived almost everywhere in Germany, Croatia, Austria, and today she is the one who carries on Gianni's vision, with that same light of foresight and knowledge, as can be seen from the line Castello di Semivicoli: from the Pecorino, which he introduced in 2013, to the red with a Bordeaux cut Terre Aquilane, with Merlot, Cabernet Sauvignon and Montepulciano d'Abruzzo. Wines of steel only, but that have the imprint of wood, yet another demonstration that it is the territory that dictates the law, given the in-depth studies at the base. And Marina does nothing but take prizes: in 2008 as "Woman of Wine and Life" for Il Golosario; or in Germany where it appears among "The best European Producers and their wines, in which only seven Italian Women of Wine are nominated; or again in 2014 with the “Abruzzo Impresa Rosa Award for commitment in respect of the territory and environmental sustainability” and so on. In addition, the Castle, with its eleven suites, received the Green Hotel award and entered the "Châteaux et Hotels Collection" chain of Alain Ducasse. Today, in fact, ten years after its inauguration, the Castello di Semivicoli is a fundamental step in quality wine tourism in Abruzzo: an act of love from a family that has dedicated everything to wine and Abruzzo. And that continues to do so, given that Marina is no longer the only woman in the family that is making itself felt, indeed.

Tomorrow, the Villa Gemma line

Miriam Lee Masciarelli is indeed one of the three children of this love, but her will is to leave her mark, not to cradle herself in a story already written and to dare, even wrongly. "At thirty, I can still afford to make some mistakes, later not". Miriam has loved this world since she was a child, when she often followed her father and grandfather in various activities, from logistics to production to harvest and sale. After graduating in economics and management at Luiss in Rome, he moved to New York, where he worked first for a wine importing company and then for a wine & beverage communication agency. At the age of 18, Miriam is already a director of the family business and, while studying in Rome, is the junior brand manager. In particular, his contribution is evident in the style of the Villa Gemma line, especially in one of the most representative wines, Rosso Montepulciano d'Abruzzo DOC, starting from the 2012 vintage. But also in Cerasuolo, another expression of Montepulciano, only apparently simple: it is a fresh wine, young, but of great character. Today Miriam works full time in the family company as an Ambassador brand, focusing in particular on promotion, corporate communication and management of various events around the world. Because there are such loves, destined to survive beyond life, beyond death. Loves that continue to tell us something through the most human element, the earth, producing eternal wines.
