Put a pot of salted water on the stove and bring to the boil. Wash the zuchinisdry them with a kitchen towel and, using a knife, cut only the external parts of the vegetables lengthwise, then cut them into small pieces, not too small. Collect them on the cutting board, or in a bowl, then pour them into the pot full of water that will have started to boil in the meantime. Blanch them for about 1 minute, drain well and set aside.
