We had friends over for dinner recently and I decided to make it fun for the kids by making breakfast for dinner by serving waffles. I had some fresh blueberries in the refrigerator so I made a tasty blueberry sauce to top our waffles. The sauce was filled with juicy blueberries and was absolutely delicious on the waffles. It would also be fantastic on pancakes, French toast, crepes, or ice cream too. Needless to say this sauce was gobbled up quickly and everybody loved it.

Mix the cornstarch with the water until well combined. Pour the water mixture, blueberries, sugar,  lemon juice, and lemon zest into a pan over medium heat. Cook, stirring occasionally for 4-5 minutes or until thick and some of the blueberries are bursting. Remove from the heat and let cool. Spoon over your waffle, pancake, French toast, crepe, or ice cream. Enjoy.

Blueberry Sauce




Cook Time: 5 min.



Ingredients:

1/2 cup of water
2 tbsp cornstarch
2 cups of fresh blueberries
1/4 cup of sugar (more if your berries are tart)
2 tbsp lemon juice
Zest from 1 small lemon

Directions:

Mix the cornstarch with the water until well combined. Pour the water mixture, blueberries, sugar, lemon juice, and lemon zest into a pan over medium heat. Cook, stirring occasionally for 4-5 minutes or until thick and some of the blueberries are bursting. Remove from the heat and let cool. Spoon over your waffle, pancake, French toast, crepe, or ice cream. Enjoy.
