Stuffed Strawberry Bites

I am finally able to use my hand! Knife wounds are no fun and I am thankful to be healing so quickly. I am looking forward to being back in the kitchen again.

I wanted to make a quick and tasty after school snack for my kids. I found some strawberries, blueberries, and cream cheese in the refrigerator. I mixed the cream cheese with a bit of powdered sugar and vanilla extract. Sliced the strawberries in half then spread on a mound of cream cheese mixture then topped them with blueberries. My kids were absolutely thrilled with these strawberry bites & gobbled them up within minutes. They are perfect for appetizers, party snacks, healthy dessert, or snack – I will be making these again soon.

Combine the cream cheese, powdered sugar, and vanilla extract. Mix until well combined. Taste & add more sugar if desired.

Remove the stems of the strawberries then slice in half lengthwise. Spoon a mound of cream cheese on each strawberry half then top with a couple of blueberries.

Place on a serving plate and serve. Enjoy.

Ingredients:

1/4 cup cream cheese
2 tbsp powdered sugar, more if desired
1/8 tsp vanilla extract
5 strawberries, hulled & halved lengthwise
20 blueberries

Directions:

Trail Mix

I pack a little snack in my kids backpacks every morning along with their lunches.  I was in the process of buying some trail mix packets when I realized two things.

  1. Trail mix is expensive!
  2. I had all the ingredients for the trail mix at home in my pantry.

Needless to say, I put the trail mix back on the shelf and made some at home using what I had on hand. After looking in my pantry, I found almonds, cashews, dried cherries, dried blueberries, raisins, pistachios, peanuts, white chocolate chips, and semi sweet chocolate chips. I threw them all in a bowl and mixed them together. I gave my kids a little bowl to snack on after school and they loved it. I packaged the rest into snack sized tupperware (about 1/4 cup in each). Now I have some pre-made snacks available to throw in the kids’ backpacks in the morning and didn’t spend a fortune on them – I love that!

Combine the almonds, cashews, peanuts, pistachios, dried blueberries, dried cherries, raisins, semi sweet chocolate chips, and white chocolate chips together in a large bowl, mix with your hands until well combined. Pour 1/4 cup into tupperware containers then cover with lids. Enjoy.

Trail Mix




Prep Time: 5 min.



Ingredients:

1 cup of raw almonds
1 cup of cashews
2 tbsp peanuts
2 tbsp pistachios
2 tbsp dried blueberries
1 tbsp dried cherries
1 tbsp raisins
1-2 tbsp semi sweet chocolate chips
1-2 tbsp white chocolate chips

Directions:

Combine the almonds, cashews, peanuts, pistachios, dried blueberries, dried cherries, raisins, semi sweet chocolate chips, and white chocolate chips together in a large bowl, mix with your hands until well combined. Pour 1/4 cup into tupperware containers then cover with lids. Enjoy.
