Raspberry Coconut Pom Smoothie

It’s feeling like summer here in Portland. Today it was sunny and nearly 90 degrees! My kids were hot and tired when I picked them up from school so I decided to treat them to a tasty smoothie. I used some fresh raspberries, Greek coconut yogurt, Pom/Coconut juice and ice. They were a touch tart so I added a little bit of agave which made them perfect! These drinks were a refreshing, delicious, and healthy after school snack.

Combine the fresh raspberries, Greek coconut yogurt, Pom/Coconut juice and ice together in a blender. Blend until smooth. Taste & add a touch of agave (or honey), if needed. Serve immediately. Enjoy.

Raspberry Coconut Pom Smoothie




Yield: 2

Total Time: 5 min.



Ingredients:

6 oz fresh raspberries
2 (5.3 oz) Greek coconut yogurt
12 oz Pom/Coconut juice
2 cups of ice cubes
Agave or honey, to taste

Directions:

Combine the fresh raspberries, Greek coconut yogurt, Pom/Coconut juice and ice together in a blender. Blend until smooth. Taste & add a touch of agave (or honey), if needed. Serve immediately. Enjoy.

Homemade Strawberry Milkshake

There’s just something so nice about a homemade shake. I decided to treat my family to shakes after dinner. I grabbed some vanilla ice cream, milk, fresh strawberries, and vanilla then blended them together to make a thick and creamy strawberry shake. Needless to say, they were a HUGE hit. I love that they took 5 minutes to make and put such huge smiles on my favorite faces.

Combine the vanilla ice cream, milk, fresh strawberries, and vanilla extract together in a large blender. Blend until smooth and creamy. Pour into glasses and serve with a strawberry garnish and a straw. Enjoy immediately.

Homemade Strawberry Milkshake




Yield: 4

Total Time: 5 min.



Ingredients:

2 1/2 cups of vanilla ice cream
1/2 cup of milk (more if you want a thinner shake)
1 pint of fresh strawberries, hulls removed
1/2 tsp vanilla extract

Directions:

Combine the vanilla ice cream, milk, fresh strawberries, and vanilla extract together in a large blender. Blend until smooth and creamy. Pour into glasses and serve with a strawberry garnish and a straw. Enjoy immediately.

Homemade Banana Ice Cream with Mini Chocolate Chips and Coconut

After seeing several posts around the web making banana ice cream using only frozen bananas and a little bit of milk, I decided to make it with my kids. It was a super hot day and the kids were bored so we grabbed the ripe bananas out of the freezer and made this sweet and tasty treat. My kids had fun making the ice cream and both agreed it would be even better with some mini chocolate chips and shredded coconut added to it. This ice cream was super fun and simple to make and my kids thought it was amazing – they ate every single bite.

Peel the ripe bananas and cut them into thick coins. Place on a plate and put into the freezer for 2 hours.

Side Note: I used the over ripe bananas that I had previously placed into the freezer. Trying to peel the frozen banana peels made it more difficult so I recommend peeling and cutting the banana prior to freezing.

Remove the frozen bananas and place into your blender along with a couple of tablespoons of milk. Blend until creamy, making sure to scrape the sides with a rubber spatula. Remove from the blender and place into a bowl.Add the mini chocolate chips and shredded coconut then mix until well combined. Place into the freezer for 30 minutes then scoop and serve. Enjoy!

2 tbsp sweetened shredded coconut
