Simple banana bread mug cake

Ingredients

1 tablespoon of melted butter
1 egg
1 tablespoon of milk
1 ripe banana
3 tablespoons of flour
2 tablespoons of brown sugar
1/2 teaspoon of baking powder
Cinnamon

Method

As a first step, melt the butter in the microwave inside the cup you will use.
Then add a chopped banana and mash it with a fork.
Always pour an egg, milk and then the powders into the cup and mix everything with a fork.
Cook the cake in the microwave for 2 minutes at the maximum temperature.
It will seem too soft at first, but let it cool for a few minutes and it will be perfect.
To decorate, sprinkle with icing sugar or serve with a dollop of whipped cream.

Banana bread in a vegan cup

Here is also one vegan version of the banana mug cake, which is also a lighter alternative to the classic recipe because there are no eggs.

Ingredients

1 ripe banana
1 tablespoon of peanut oil
4 tablespoons of flour 0
1 teaspoon of yeast
2 tablespoons of brown sugar
3 tablespoons of vegetable milk
Cinnamon

Method

Proceed as in the previous recipe, mixing first the liquid ingredients in the cup and then the powders.

Ingredients:

  • 1 cup fresh or frozen cranberries
  • 2 tbsp sugar
  • 2 tbsp water
  • baking spray
  • 1 1/4 cups white whole wheat flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp butter, softened
  • 1/2 cup light brown sugar (not packed)
  • 2 large egg whites
  • 3 ripe medium bananas, lightly mashed
  • 1 1/2 tsp vanilla extract
  • 1/2 tbsp turbinado sugar

Directions:

In a small saucepan combine the cranberries water and sugar and bring to a boil. Simmer over medium heat until the cranberries burst, about 4 minutes.

Preheat oven to 350°F. Lightly spray a loaf pan with baking spray.

In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter and brown sugar with an electric mixer. Add egg whites, bananas, and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture and blend at low speed until combined, do not over mix. Fold in cranberries and pour batter into the prepared loaf pan; sprinkle with turbinado sugar on top and bake in the center rack for about 60 minutes, or until a toothpick inserted in the center comes out clean.

Transfer the pan to a wire rack and let the pan cool at least 25 minutes, bread should be room temperature before slicing.

Roasted Strawberry Banana Bread

This banana bread is moist and delicious, made with white whole wheat flour, sweet roasted strawberries and ripe bananas, with just a smidgen of butter, so you can enjoy a slice without the guilt!

I had some bananas that were getting brown and I was really in the mood for banana bread, so I combined the two for a delicious quick bread. You can turn these into muffins if you prefer. In the past I attempted this recipe, but the strawberries released too much liquid which made the bread a little too moist. Roasting the strawberries is the perfect solution, most of the liquid dries out from roasting so you get the flavor of the strawberries in every bite.

  • 3 ripe medium bananas, mashed
  • 2 tbsp unsweetened apple sauce
  • 1 1/4 cups white whole wheat flour
  • 3/4 tsp baking soda

  • 2 tbsp butter, softened
  • 1/2 cup light brown sugar (not packed)
  • 2 large egg whites
  • 1 tsp vanilla extract
  • baking spray

Directions:

Preheat oven to 350°F. Lightly spray a loaf pan with baking spray. Place the strawberries on a baking sheet and roast for 25 minutes, remove and set aside.

In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture and blend at low speed until combined, do not over mix. Fold in strawberries and pour batter into the prepared loaf pans; bake in the center rack for about 50 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.
