The ice cream inspired by Giorgio Armani for Milan Fashion Week #DaAssaggia – Italian Cuisine

From 21 to 27 September in Milan you can also eat fashion: Gusto17, the Milanese artisan ice cream parlor included by Forbes among the 100 Italian excellences 2021, launches a limited edition ice cream stick to celebrate Giorgio Armani and the 40 years of Emporio.

The shades between gray and beige meet in the iconic color that has always distinguished the Armani style. Greige is created in a completely natural way with ingredients that represent Italian excellence: the filling is a Sicilian salted Pistachio ice cream, while the topping is of fine white chocolate processed with vegetable carbon powder derived from coconut.

The bi-color stick, available in three different combinations of greige nuances, joins the Pantone-inspired Design Sticks. These will be enriched over time with new products to form a Special Edition of Stecchi Gelato, all made in line with the philosophy of Gusto 17, i.e. only natural and seasonal ingredients, no artificial dyes, preservatives or thickeners.

"The idea of ​​this dish was born from the desire to fully express the broad taste of this crustacean and
its different parts and use a single one very high quality raw material to build a whole recipe around it. It is a recipe that fully enhances the qualities of the crab on the one hand, and allows in the kitchen to limit waste as much as possible: the meat contained in the claws is used for the filling of homemade ravioli; the goodness of the sauce is due to the internal part of the carapace – the so-called coral; while by toasting carapace and claws together we obtain the broth to cook the ravioli. "

The delivery formula also makes us become creative: the ravioli can be placed on the plate and decorated as desired with the cuttlefish ink sauce and the shellfish sauce, supplied separately. Ingredients for 4 people:
280 gr carnaroli rice
120 gr butter
1 bay leaf
2 g saffron in pistils
100 gr Parmigiano Reggiano
10 gr chopped shallots
100 gr white wine
8/10 gr of fine salt

For the vegetable broth:
100 gr gold onion, 100 gr carrots, 50 gr green celery

How to make saffron risotto at Emporio Armani Ristorante

  1. Wash the vegetables and cut them into small cubes, let them stew in a pot with high sides, add 2.5 liters of water, cook without boiling
  2. Toast the rice with butter and shallot, blend with the wine and add the bay leaf, cover with the broth flush, continuing to

Ingredients for a dish:

80 gr carnaroli rice
2 scallops
1 lt vegetable broth
300 g orange flavored water
300 gr fish broth

20 gr extra virgin olive oil
20 gr orange juice
10 gr butter
10 gr Parmigiano Reggiano
10 gr chopped shallots
10 gr orange peel
5 gr lemon juice

How to make saffron risotto with scallops and orange from Emporio Armani Ristorante

  1. Toast the rice with oil and shallot; blend with a glass of wine; add the broth; add the saffron; add the salt
  2. Continue to cook with the orange water by wetting the rice
