Ingredients
- 4 ribbed tomatoes
- 300 g robiola
- 200 g courgettes
- 50 g green beans
- a red pepper
- a head of lettuce
- basil
- extra virgin olive oil
- salt
For the vegetarian toast recipe, roast the pepper on the grill, then peel it, clean it, cut it into strips and then add salt. Thinly slice the courgettes lengthwise; lightly grease the ribbons obtained, grill them, then salt them. Check the green beans and boil them.
Remove the caps from the tomatoes and make 3 thick washers from each. Mix the robiola with a tablespoon of oil and the chopped green beans together with 4-5 basil leaves.
Whip the toasts alternating for each2 slices of tomato with robiola, strips of pepper, courgette strips and chopped lettuce.
